Muffins: Any kind (make'm, wrap'em in saran wrap & freeze'm, they reheat in the micro in 15-20 seconds) or thaw in a lunch bag by lunchtime
Fruit & Yogurt Parfait- layer yogurt, then slices of fruit or berries, more yogurt in a 1 c. container. Cover. These freeze great and with slowly thaw by lunchtime.

Crudities with Spring Onion Mayonnaise Ingredients

carrots
red pepper
yellow pepper
orange pepper
cucumber
radishes
cherry tomatoes
mayonnaise
spring onions


Finely chop a bunch of spring onions and mix into a jar of vegan mayonnaise. Cover and leave in the fridge for at least an hour so that the flavour penetrates the mayonnaise.

Cut all of the vegetables into ½ inch medallions apart from the radishes and tomatoes which can be left whole.

A great one is salad (predictably). Can be prepared a few days in advance, and easily varied by adding things like tuna or pasta or if you feel more adventurous you can try adding different vegetables or nuts and pulses. Is also very cheap and very good for you!

i saw a bento box lunch for kids, on rachel ray, cold sesame/peanut noodles, candi sushi, i think maybe a little chicke satee. go to her website and look for it it was when the talk show first started, so i dont remember evey thing that was in it, but it was so cute. and i would have ate the meal, as an adult, or even when i was a kid.
