My husband and I had gotten on a health food kick a while back and opted for buffalo instead of beef, but I never knew how to fix it really good so I never did. I would like to do something with it (not to mention it wasn't cheap) and BTW we aren't being healthy anymore, so does anyone have any ideas on how to use it? And please, nothing creative. I get as creative as making my own spaghetti sauce and that's about it.

Buffalo meat is lower in fat than beef; therefore, it cooks faster than beef and can become dry if over cooked. That's why it's important to always remember "Low and slow is the way to go!" As a general rule, buffalo should be cooked about 50 degrees lower than beef, but for the same amount of time. Also, buffalo meat is best when cooked from rare to medium. Never cook directly in a flame.


Mustard Short Ribs


4 lbs. ribs
1/3 c. prepared mustard (I just use regular yellow mustard)
1 T. sugar
2 T. lemon juice
t. salt
1/2 t. pepper
2 cloves of crushed garlic
4 medium onions, sliced

Place buffalo ribs in shallow baking dish. Mix mustard, sugar, lemon juice, salt, pepper, and garlic; pour over the ribs. Top with onions. Cover and refrigerate, turning ribs occasionally, for 4 to 24 hours.

Place ribs with marinade and onions in Dutch oven or any other oven proof baking dish, and cook at 350 degrees for about 2 hours. Check for tenderness. Cook longer, if necessary, for 10-minute intervals until the ribs are tender.



Buffalo Meat Loaf


2 eggs beaten
½ c. milk
½ c. crushed saltine crackers or Italian bread crumbs
¼ c. dried onion
2 Tbsp. Parsley
1 t. salt½ t. sage
1 ½ lb. Ground Buffalo

Mix above ingredients well. Pat into a greased loaf pan.
Bake for 1¼ hrs. at 325 degrees.


Combine:

¼ c. ketchup2
T. brown sugar
1 t. dried mustard

Spread over meat loaf and bake another 10 minutes until internal temperature reaches 160 degrees F.

There are, as with other bovine, different cuts and different ways cooking them. Roasts, steaks, and ground meat are the forms in which the meat goes to market. The meat is juicy and mild flavored, Traditionally, the hump has been a delicacy cut. The cuts are similar to venison or beef and are cooked the same way. As with venison, the meat is darker red than beef. Bison does tend to have a richer, fuller flavor and the gristle, unless removed, tends to be quite resistant to the teeth of the diner. Because the animal naturally has less marbling of fat through the meat than beef, buffalo roasts should be cooked at a lower temperature than beef; a standing rib roast is rare when the internal temperature reaches 135 degrees. As with good beef and venison, roast and steaks are best cooked to no more than medium-rare unless your family demands well-done meat; then it's a waste to serve them such good meat done that way.
So here are two common recipes you would use with beef.


Bison Pot Roast

3 lb Bison roast
2 tbl Cooking oil
6 x Onions sliced
1 tsp Salt
6 x Peppercorns
1/2 tsp Freshly-ground black pepper
4 x Carrots peeled
1 x Celery stalk chopped
1 x Bay leaf
1 cup Apple juice
1 cup Water
6 x Potatoes peeled, quartered
Heat oil in heavy roasting pan. Add bison roast and brown well on all sides. Add salt, pepper, onions and saute. Add carrots, celery, bay leaf, apple juice and water. Cover and bake at 275 degrees for 1 hour. Remove from oven, add potatoes; cover and return to oven for 1 more hour or until potatoes are fork tender. Check occasionally and add more water if it gets too dry. Adjust seasonings.

Bison Loaf

2 lb Ground bison
1/2 pkt Soda crackers finely chopped
1 x Egg
1/2 cup Milk
1/2 med Onion chopped
1/2 med Green pepper chopped
2 tsp Worcestershire sauce
Salt to taste
Freshly-ground black pepper to taste
Garlic salt to taste
Mix all of the above ingredients and form into loaf. Bake in 300 degree oven approximately 45 minutes or until done.

Sorry, my one experience with Buffalo was that it was tough. Moose & Elk were excellent. Good question; I look forward to the answers.
