If me and my bf are riding our bike for an hour a day each, how long do you think it'll take for us to start seeing results? Does it matter what we eat if were doing this?

totally matters what and how much you eat - in fact weight loss is more about what you eat than what exersize you do. also, you cant just generically ride an hour a day. the deal is that you have to push to see results. gain from exersize comes from your body adapting to a new work load, so you have to shock it a little each time for ti to leave its comfort zone. you will have to very the amount you work - better half an hour of really intense exersize three time a week, then complacent hours once a day. the bike riding just burns extra calories, but not many, remember, bikes were made so that it would be easier to get some where, they are, by design , work reducers. better to run or lift weights.
as far as diet, look at what you are eating, not just your caloric intake. are you eating a lot of salt/sodium? that would make you retain water. soda is massive amounts of sugar, liguid high gain sugar. unless you go play a hard game of soccer or run four miles immediately after, drinking soda will plant fat right on you butt. what is your protein intake? processed red meats? white bread has more sugar and carbs in it than an equal weight of just pure sugar (seems impossible, doesnt it? modern chemistry at work). its not hard to eat healthy - usually all you have to do is eat mostly groceries, and stay to the perimeter of the store, to foods that "go bad" eventually - not stuff thats full of preservatives and chemicals. veggies, light meats, less fruits and least starches, grains and carbs. make dishes that have roughly one fist size portion each of protein, carbs, and veggies, and eat four times a day (sounds counter intuitive, but that will raise your metabolism) DO NOT cut out all fat - you need some in you r diet to be happy, and nutrients are absorbed into body fat. but look at the types of fat you eat. you want simple fats, not saturated fats. look up www.crossfit.com - its an excellent sight for training to get in great shape, fast. no gimmicks, just hard work. good luck!

YES it matters. Diet is just as important if not more important than exercise. But make sure on your rides that you are varying your pace, speed, intensity to keep your body guessing. When I work out I never do the same thing twice

diet is VIP but you will see results from just excersizing, as its more than you were doing before. however, the results can be greatly incresed with a good diet and lots of water.
