And why is the pope wearing one and not other catholics besudes priests?

When people wear any head covering as a religious observance, it is generally a sign of respect.
Priests and bishops wear vestments that originated in the clothing of a past era. It is traditional. But it is not a necessity of faith. Liturgical garb can change over time. And, if necessary, a priest can perform his priestly functions in ordinary clothes.

Regarding Islam:
It is 'kufiya' in Arabic. It shows respect as you must be pray/be in a prayer place with a naked head. This is what people think, it is not written anywhere in the Quran. It does not hurt anyone to wear it.
