I am currently a health science student at a university and the best book that I would recommend is
Human Anatomy and Physiology written by Elaine N. Marieb and Katja Hoehn
This an an excellent book with wonderful diagrams and charts and covers everything in basic anatomy that you would need to know....it is usually used for nursing students, medical students, biomedical students, and students in any sort of human kinetics or health sciences programs....

I don't know of any textbook style books, but I got a really cool anatomy coloring book that also explains the physiology of everything. I found it pretty helpful. I got it at Barnes and Noble.

The gold standards for US medical schools are "Netter's Atlas of Human Anatomy" (this one is a must), "Clinical Anatomy" by Moore, and Physiology books by Guyton and Hall, or Bern and Levy

Cambell Biology books are good; some are online.
To review for my AP final, I used Cliff's Biology AP (it's from Cliff notes). It's cheap and very good for reviewing. I spent a week and remembered everything. HOWEVA, for a deeper understanding if you never learned something at all, try one of the other suggestions (like Grey's Anatomy?)

Grey's anatomy. The one the T.V. show was named after. Just pick it up and use it. You will understand when you see it.

Search for "Saladin anatomy" on amazon and you'll find one of the best reviewed textbooks I've seen.
