My favorite place in Australia is Tasmania. You were probably talking about the south of the big part of Australia, though Tasmania is south. I visited a wild life rescue park that was terrific. This place raises orphaned critters and tries to reintroduce them into the wild. They have kangaroos, wallaby's, devils, Koala bears, ekidnas, and others. Really neat.
Country side is rugged with a lot of mountains and no big cities, so if it is night life you are looking for, better to go to Sydney or Melbourne.

If you are going all the way to South Australi there are 2 places you MUST check out (and im going to sound like a total alcoholic - but anyway)
1. The Coopers Brewery, awesome beer (miss it dearly!) in Adelaide
2. The Barossa Valley. The barossa is THE wine region in Australia, most of our biggest exports come from this region, but do a wine tour (jump on and off sytle bus is great) and visit some of the more boutique wineries too, ive had so many awesome trips there, the people are lovely, the wine is awesome, and most of the wineries have fabulous restaurant.

The Barossa valley (full of xcellent vineyards), The great australia bite, the great ocean road, nice beaches (eg glenelg and brighton, kangaroo island (cool for a day trip)

Mount Gambier, the Blue Lake is worth a look. Its a volcanic crater filled with bright blue water.
Beachport & Robe are small towns in the south east, they have great beaches & are well worth a visit.
