My favorite is called Taco Pie :) Very simple.

You bake it in a ceramic or glass pie tin at 350F for 40 minutes.

Layer one: Pillsbury croissont dough from a can just lay it evenly on the bottom of the pan, cover all surface area and trim off excess to throw out...or make a croissont?

Layer two: A handful of corn chips, crush them and sprinkle lightly on the bottom

Layer three: Brown a pound of lean ground beef in a pan with a half of onion chopped, when brown add one packet of taco seasoning and a can of tomato sauce. scoop and pat into pie plate

Layer four: Cover meat with sour cream (buy about 500 ml)

Layer five: Sprinkle HEAVILY with grated cheeese :D I like using the texmex store bought stuff...extra flava

Layer six (it's hardly a layer) sprinkle more crushed corn chips for a bit of extra crunch!

It's hardly good for you but everyone I know LOVES it and they always demand it at pot lucks.

Kidney Bean Burgers

Ingredients

1 can red kidney bean
1 large onion
1 clove garlic
1 teaspoon dried mixed herbs
salt
pepper
chilli flakes
breadcrumbs
olive oil





Finely chop the onion and garlic and fry in oil until soft.

Meanwhile drain and wash the kidney beans and mash them until they are soft.

Once the onions are cooked stir in the beans and mix well. Add the herbs and some salt, pepper and chilli flakes and taste the mixture. Add more seasoning if necessary.

Leave to cool for a few minutes and then press into 4 burger shapes. Dip these in breadcrumbs and fry in olive oil until browned.

Green bean and Artichoke Casserole

3 (15.5 ounce) cans French cut green beans, drained
2 (14 ounce) cans artichoke hearts, drained
2 cups Italian seasoned bread crumbs
8 ounces grated Parmesan cheese
8 ounces shredded mozzarella cheese
1 toes garlic, chopped
1 package Italian salad dressing mix
1/2 cup olive oil
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C).
Place green beans and artichokes into fodd processor or blender and chop well. Puti into bowl and stir in dressing mix, garlic, bread crumbs, and chesses.

Pour into a 9x13 inch baking dish. Season with salt and pepper. to taste . Drizzle olive oil over the top, then cover the dish with aluminum foil.
Bake for 30 minutes in the preheated oven, then remove the aluminum foil, and bake for another 15 minutes to brown the top slightly.

For pot luck at work, my hubby always wants me to make a Taco Salad for him and his co-workers.

Ground beef (browned)
Tortilla chips
Tomatoes
Shredded Lettuce
Shredded cheese for tacos
Sour cream, black olives, hot peppers, taco sauce and salsa is optional
A few packets of taco seasoning (follow the directions on the package)
Add a good amount of salsa in the mixture after you've drained some of the liquid off. Continue to let it simmer. Then let it cool down.
Layer the chips in a pan or long casserole dish, then spread the meat evenly over the chips, next add shredded lettuce, tomatoes, then cheese and all of the other options if you wish.
This is a GOOD recipe!

Meatloaf
2 lbs. ground beef
1small onion diced
1/2 sweet green pepper chopped
2 slices of bread (run under water and squeeze out excess water)
1tsp. salt
1/2 tsp. pepper
1tsp. garlic powder
1TBS Italian seasoning
2 eggs
Mix all the ingredients together thoroughly and place in a loaf pan.
Shape to fit the pan and top with catsup. Bake at 375 for about 35 minutes

Creamed spinach

1 kg baby spinach
150 ml single cream.
1 clove garlic (chopped)
1 onion chopped

Cook spinach and onion in boiling salted water for 5 minutes. Drain well and chop finely. Add cream and garlic and place back on heat. Season with salt and pepper and serve as side dish.

Onion rings

1 onion cut into rings.
360 ml beer
250 ml self raising flour
salt and pepper
Oil for deepfrying.

Mix beer and flour and season. Dip onion rings in batter and deepfry untill golden brown. Sprinkle wit salt and pepper and serve as a snack.

Scalloped red potatoes and ham

12 cups red potatoes, peeled and sliced thin
2 cups chopped ham
1/2 cup sour cream
1 pkg. cream cheese, softened
1 cup chicken broth
1 8ounce pkg. shredded cheddar cheese

Preheat oven to 350 and spray a 9x13 pan with cooking spray.
Mix cream cheese, sour cream and chicken broth until smooth ( takes some time). Add ham and potatoes and stir gently to coat. Spoon into prepared dish and bake at 350 for 1-2 hours depending on oven.

Super Macaroni Salad
1 16 oz box macaroni cooked,drained and cooled
1 1/2 cups good mayonnaise (Hellmans, Kraft's,etc)
1 cup white vinegar more or less
1/4 cup shredded carrots
1/4 large green pepper finely chopped
1/8 cup minced onion
1 cup sweetened condensed milk
1/ 2 cup sugar

Pour the macaroni in a large bowl, add the veggies including the onions, set aside. In a smaller bowl mix remaining ingredients, taste, it should have a nice sweet and sour flavor, add more sugar or vinegar until you like the taste. Then pour over the macaroni veggie mix, blend well and put in fridge until ready to serve.



Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.


CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 chicken breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.


Peppermint Brittle
2 pounds white chocolate
30 small peppermint candy canes

Line a large jellyroll pan with heavy-duty foil. Place white chocolate in a microwave-safe bowl. Heat in microwave on medium setting for 5 to 6 minutes. Stir occasionally, until chocolate is melted and smooth. Place candy canes in a plastic bag, or between two pieces of waxed paper. Using a mallet or rolling pin, break the candy canes into chunks . Stir peppermint into melted white chocolate. Spread evenly in pan, and chill until set, about 1 hour. Break into pieces by slamming pan on counter.

Scotch Meat Loaves
1 beaten egg ......... 1/4 cup soft bread crumbs
2 tablespoons finely chopped celery
2tablespoons finely chopped onion
1/4 teaspoon salt ......... 1/8 teaspoon ground sage
Dash garlic powder ...... 1/2 pound lean ground beef
2 hard - cooked eggs ..... 1/4 cup chili sauce
1 tablespoon snipped parsley ..... 1 tablespoon water
1/8 teaspoon dried oregano, crushed
a hand full cheese shredded or sliced
In mixing bowl combine beaten egg, bread crumbs, celery, onion, salt, sage, and garlic powder.
Add ground beef, mix well. Shape half of the meat mixture around each hard- cooked egg, completely enclosing egg.
Arrange meat loaves in a 61/2x61/2x2-inch baking dish,
Combine chili sauce, parsley, water and oregano; pour over meat loaves bake in 350oven for 45 minutes. Spoon chili sauce mixture over loaves; top each with some cheese. return to oven and heat till cheese melts. makes 2 servings

Chocolate Mousse
2/3 cup light cream ......... 1/2 cup semisweet chocolate pieces
1 egg yolk ....... 1 tablespoon orange liqueur
sweetened whipped cream
In a small saucepan combine light cream and chocolate pieces,
heat just till boiling. Remove from heart, Beat together egg yolk and orange liqueur. Gradully stir about half of the hot mixture into egg yolk mixture; return to hot mixture in saucepan. Cook and stir 1 minute longer.
Pour chocolate mixture into 2 small souffe dishes or dessert dishes; cover and chill at least 2 hours . To serve top with cream
Make 2 servings

Ham Fried Rice
2beaten eggs .... 2 Tablespoons chopped fully cook ham
small can chopped mushrooms, drained
3 tablespoon sliced green onion
1 tablespoon soy sauce .....1 clove garlic, minced
1/8 teaspoon ground ginger .... 11/2 cups cold cooked rice
In a skillet cook eggs in 1 tablespoon of oil, without stirring, till set, Invert skillet over a baking sheet to remove cooked eggs; cut eggs into short narrow stips,
in the same skillet cook chopped ham, mushrooms, green onion, soy sauce, garlic and ginger in the remaining oil over heart for 3 to 4 minutes, stir in cold cooked rice and egg strips; heat through. Pass additional soy sauce if desired. Makes 2 servings
# Chill rice before preparing this dish, Using hot cooked rice causes the mixture to stick

i like healthy recipes!
here is a good faux apple pie

take an apple and cube it.
sprinkle splenda and cinnamon on top.
heat in microwave on high for 2 minutes (or till desired softness)

TADA.. simple and good crustless apple pie (:
