I signed up to bring a main dish for the holiday potluck that we are having at the elementary school that I work at. It has to be enough for about 12-15 servings. I want to do some type of meat. Someone is already bringing a ham. I will have access to an oven but limited time to dedicate to cooking anything during the school day. So, Iam looking for something I can make early that morning or the evening before. I do not want to do fried Chicken or a casserole. Any ideas? I want something that is somewhat traditional or European.

something with a little elegance. No soups or stews, It's Florida and it will probably be near the nineties by lunchtime.

OK, so it is pot luck. Who said you only had to bring one dish. What are you best at cooking? What are your family's favorite foods, where will the party be held, etc are all questions you must answer before you can choose your dish or dishes. Personally I take both a main dish and either a dessert or a side dish. If this is for the winter you can do a casserole that would include protein and starch. A good one is a takeoff on a Reuben sandwich with mashed potatoes, sauerkraut, and corned beef. Then bake a pan of brownies, everyone loves brownies.

I would go for mini sandwiches, but not your ordinary chicken or tuna salad. More like subs. The night before take french bread and layer turkey, ham, hard salami and mozzarella cheese. Right befoer serving add slices of tomato (or you could leave a plate of sliced tom. for people to do for themselves) and pour a good italian dressing on the inside of the bread. (If you have the time, throw them in the oven on a really high heat or broil to melt toast them!) Cut into 2-3 in pieces.

You could also make roast beef with cheedar cheese. These would also be really good toasted if time permits!

Why not try a pot roast in a crock pot.

5 pounds top or bottom round roast
1 1/2 cups dry red wine
1 onion, diced
2 carrots, peeled and diced
2 cloves garlic, minced
1 stalk celery, diced
Salt and pepper to taste
6 cups beef bouillon

Place all ingredients in a crockpot and cook on low 6-8 hours or on high for 3-4 hours.

POT OF LUCK MAIN DISH SOUP

1 lb. ground beef
1 egg, slightly beaten
1/4 c. fine dry bread crumbs
2 tbsp. finely chopped onion
1/8 tsp. salt
1/8 tsp. pepper
2 tbsp. shortening
2 can Campbells beef broth
2 soup cans water
1 c. thinly sliced carrots
1 1/2 c. uncooked wide noodles
1 sm. bay leaf

Mix thoroughly beef, egg, bread crumbs, onion, salt and pepper; shape into 24 meatballs. In large saucepan, brown meatballs in shortening. Pour off fat. Add remaining ingredients. Bring to boil; reduce heat. Simmer 10 minutes or until done; stir occasionally. Remove bay leaf. Makes about 7 cups.

My vote is to make meatballs. You can make them ahead, they are easy to heat and you can serve them with a pineapple sweet and sour sauce or in a BBQ sauce and have them alone with toothpicks or with small rolls that people can stuff themselves. Something European would be more open face sandwich fixings, or a meat filled strudel made with filo dough. A good meat and spinach recipe is right on the box. I have used it.myself! try a pork loin, cook it the night before let it cool over night and then slice it and layer in a pan with a can of apple pie filling thinned down with about 1/2 can water mixed in it, pour this over the pork loin cover then about 30 minutes before serving place in oven and warm at 250 degrees. really good good luck Don

Stew. Beef, potatoes, carrots, stuff like that. Make it the day before, and heat it up before serving. Problem solved.

Order a fried Turkey. Order a baked turkey from your local supermarket. One that sells hot and cold foods. What about Pot Roast?

Sausages, like kielbasa, Spanish chorizo or the German bratwurst. They are a hit in potluck parties and you still have time to preen.
