take an apple and cut it in half put lemon juice on one side and not the other. Then let it set and one side turns brown, but not the side with the lemon juice. That stayed fresh

It also works with most citrus juices (orange, grapefruit) and it's because of citric acid (vitamin c, ascorbic acid, whatever) and an acid is sold in powder to keep fruit from browning ("Fruit Fresh"?). I have to admit that I don't know how it works, but it must be acidity because vinegar (dilute acetic acid) also works. Cauliflower gets black spots and you can avoid that by putting a paper towel over the head of cauliflower and sprinkling vinegar on it. Different mechanism than the apple, though. The acidity inhibits mold growth, the cause of black spots on cauliflower.
