I am from the South, so Chicken and Dumplings tops my list, but that is very time consuming. An easy chicken dish to make, is take 3-4 chicken breasts put them in a crock pot on low heat. Add 2-3 cans of Cream of Mushroom soup, sliced bell pepper and onion, salt, pepper and any other seasonings you like. Cook all day (6-8 hours) and you can make with a side of rice. The soup makes a wonderful gravy to pur over the rice.

Beer can chicken!
Spice Rub:
2 tablespoons garlic powder
2 tablespoons dried minced onion
1 tablespoon ground cumin
2 tablespoons dark brown sugar
1 tablespoon paprika
1 tablespoon salt
1 tablespoon freshly ground black pepper
1 teaspoon cayenne pepper
1 tablespoon oregano
1 tablespoon chopped rosemary
1 tablespoon olive oil
1 (3 1/2 to 4-pound) chicken
1 (12-ounce) can beer
Mix the ingredients for the Spice Rub until they are well blended.
Place chicken in a large ziplock bag with olive oil.Rub it all over the chicken, inside and out. I like to let mine sit in the refrigerator overnight. but, you can let it sit for about 4 hours. The longer you let it soak up the flavor from the dry rub the better. Rotate your chicken every once in a while so that it is evenly seasoned.
Heat grill. Make sure that your grill is large enough for you to be able to shut the lid. I have to remove the top rack from my gill to do this.
Open the beer and pour out about 1/2 of the can. Sit the chicken on the beer can so the legs are at the bottom and the wings are at the top. Stand the beer can on the grates over the drip pan. Put the cover on and cook over indirect heat until the juices run clear, about 1 hour to an hour and a half.. Let your chicken rest 15 minutes before serving.
Note:They sell racks that you can use to make this with at just about most cooking supply stores or even at Walmart.
This chicken can also be cooked in a 350 degrees F oven. Just stand the beer can in a shallow roasting pan with a little bit of water in the bottom and cook about 1 hour or until juices run clear.
I usually serve potaoto salad, macaroni salad or cole slaw with it.

1 (4 pound) whole chicken
salt and pepper to taste
1 large lemon, sliced
6 cloves garlic, sliced
6 sprigs thyme
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
Place a large sheet of parchment paper into the middle of a roasting tray. The parchment must be large enough to completely envelop the chicken. Season the chicken with salt and pepper, stuff with half of the lemon slices, and place breast side up in the middle of the parchment paper. Sprinkle garlic slices, and thyme sprigs evenly over the chicken. Lay the remaining lemon slices over the breast. Fold the parchment over the chicken forming a loose parcel.
Bake in the preheated oven until the chicken has cooked, about 1 1/2 to 2 hours. A meat thermometer inserted into thickest part of the thigh should reach 180 degrees F.

southern recipes. chicken and dumplins or chicken pot pie mmm
just depends on what your in the mood for i guess.
sometimes some home fried chicken tenders with baked mac n cheese is to die for ;op

this may sound silly but i love my moms chicken when she puts some kind of liquid on it then covers it in corn flakes and put in the oven. its so good
