You need to be certain the pan temp. is high enough.
If the grease is not hot enough the crust you want will fall appart.
you need to have the pan hot to sear a quick crust then you can turn down the heat (the pan will hold the temp for a few minutes before cooling (not cool but just less hot than at first)
this trick should be what you need to change to get that nice
crunchy crust.

Here is my own recipe for crispy chicken! Can you buy Wonder flour where you live? If so, use that, add about 1 to 2 tablespoons of cornmeal to the flour mixture.No you don't need to dredge it in eggs.Just rinse the chicken off with cold water, put your flour and cornmeal in a gallon sized freezer bag with your choice of seasonings.I use onion powder, garlic powder, chicken seasoning powder, a little salt & pepper,a pinch of paprika.Mix all dry ingredients together.Add chicken and fry.A cast iron frying pan works best, let the oil get hot, enough so a bread crumb will sizzle.Fry until golden brown,not burnt.A lid helps, turn the chicken every two to three minutes.It may take a while, but the chicken comes out tender inside and crispy outside!

Marinate your chicken in a large bowl covered over night in butter milk and a few dashes of hot sauce in the refrigerator. Dry the chicken off with paper towels before dredging it in the flour and egg mix. Keep using the ingredients that you are using just double dip the chicken. I like to add a little cayenne pepper and garlic powder to the flour also. Make sure the temperature of the oil is hot enough, it should be around 350 degrees. Not only will it be crispier but, if the oil is hot enough it will not absorb into your chicken as much. Drain the fried chicken off on paper towels.

Depends if you are frying or baking. Baking is considered healthier. Wash the chicken - any cut will do, but wings are a waste of time in my opinion. Weigh the chicken and turn oven on to heat 180 degrees to get it good and hot. Calculate the time by this formula. 20mins per lb plus 20 minutes. Easy! Only fish is quicker! Rub a little oil over the skin of the pieces (you do need the skin on!) and onto that rub any salt and pepper, herbs (tarragon is good) or spices, and sprinkle some lemon juice over that. Dust with flour, though I feel this is not necessary. I never do this - perhaps I should, but anyway, I digress. Pop it on a tray preferably on a rack to lift the chicken off the bottom of the tray and put in oven on a middle shelf. Baste it, ie pick up some of the fat and oil that it has leaked into the bottom of the tray and spoon it over the chicken. This will all help to crisp up the chicken. If you do find it is catching or going too brown and crispy to quickly lightly cover wih foil to prevent further deepening of colour. But the chicken must be cooked for the right amount of time to avoid food poisoning! Pierce the thickest part of the chicken to check that the juices run clear. Any blood, or any doubt, leave it in a bit longer. Enjoy! And good luck with your cooking! It is nice to know that some young people are looking to cook proper food.

Oven fried chicken is great and easy. Preheat oven to375. Cover a large roasting pan with foil and put 1/8- 1/4 inch of oil in it. Get a large zip-lock baggie or sturdy paper bag. Pour in enough flour to generously cover the amount of chicken you're frying. Season this flour with all your favorite seasonings, such as garlic powder, onion powder, paprika, thyme, salt & pepper. If you have a preblended chicken seasoning use that. Next put your pan of oil in the oven to get nice and hot. Shake your chicken parts a few at a time covering the skin completely. Place them in your hot oil smaller pieces in the center, larger ones on the outside. Bake about 45 minutes - 1 hour turnig half way through. This chiocken is great.

Im great at crispy fried chicken! I dredge it in eggs, About 3 for a whole chicken cut up, no milk added. Then i dredge it in flour and cook in crisco about half way up the chicken. I cook it on medium for 10 minutes on each side and then 20 minues with the lid partially on, let the steam escape or it wont be crispy. Also if it starts getting too brown turn down the heat.

Deep fry the chicken always in enough oil to cover it.
When it is are 3/4th done, lift it out of the oil and hold it for 15 seconds before droppingit back into the oil.
Keep repeating this at 1/2 minute intervals till the chicken is done.
This will help get rid of excess moisture and make the chicken crispier when it is done.

"Crispy Fried Chicken" - 4 to 6 servings
1 1/2 cups all-purpose flour
1/2 cup Italian salad dressing
2 lbs. chicken parts
1 tsp. baking powder
1 tsp. paprika
1/2 tsp. rubbed sage
1/4 tsp. salt
1/4 tsp. pepper
1 cup buttermilk
Salad oil
1) In small bowl, combine 1/2 cup of the flour and Italian dressing to make a paste. Spread mixture all over chicken pieces to coat. Cover; refrigerate overnight.
2) About 1 1/2 hours before serving: In pie plate, combine remaining 1 cup flour, baking powder, paprika, sage, salt and pepper. In another pie plate, place buttermilk. Dip chicken pieces in buttermilk, then in flour mixture.
3) In 10" skillet over medium-high heat, in 1/2" hot oil, cook chicken pieces until browned on all sides, carefully turning once. On wire rack in jelly-roll pan, arrange chicken pieces in single layer.
4) Bake at 350* for 50-60 minutes until chicken is fork-tender.

First sprinkle salt and pepper on the chicken, then sprinkle with sugar. You now dredge the chicken in seasoned flour. Place the breaded chicken in buttermilk, dredge again in unseasoned flour. Fry in deep fryer at 340 degrees until it floats. The wings will float first, then the thighs, legs, and finally the breasts. PERFECT every time.

i dont no y u would wanna make fried chicken its bad az for you...
but if u want crispy chicken..
dip the chicken in egg then corn flour and put it in the fridge for about n hr then re coat it and put it in hot hot oil....
if u do that then u will end up with really crispy chicken
