One of the biggest mistakes made when fixing coon is failing to remove the fat from the meat. Most people find the fat on a coon quite distasteful. This can be done by boiling the meat and skimming the fat off the surface of the water before placing into the final dish/recipe. If it is a younger coon this doesn't take long. If it is a very large older coon, you may have to change the water a couple of times.

I've seen several recipes for coon but the only way I have personally eaten it was shredded and barbecued served on buns and it was excellent.

yes they are good eating . first you skin and wash all hair off . under front legs is a gland it looks like some stringy fat remove all of it. next let it soak in some salt water over night .put it in big pot bring to boil . there will be some dirty looking foam come to the top . pour this water off . keep changing the water until there is no more foam coming up . boil until tender . roll in some corn meal or what ever and bake with some sweet taters. if you like any meat you will like the coon. you can also do the possum the same way. in w v back in the 30's and 40' thats about all we had to eat

Way back in the distant past Daniel Boone used to eat roast Raccoon,The indians did'nt like it.Somehow the idea never caught on.Would'nt kill you though.

I was invited to a wild game cook-off sponsored by Texas Game Wardens, one of the entries was raccoon stew, and NO it was not good. It was greasy and nasty. Would not recommend it.
