of deciding what the elderly will be having on christmas dinner (believe it or not, we are housing 120 [very spacious and lesiure conditions, it's great] and more then half of them will be having dinner at the nursing home. some have families to visit on christmas though).
Now, I want opinions. Take in consideration we have to be very picky with what we feed the elderly because they are in the home since they're unable to care for themselves and many of them are unable to eat certain things.
With that in consideration, here's what I have figured.

Mashed Potatos
Creamed Corn
Squash
Peas
Asparagus
Very Thin Sliced Ham (choice of regular, low salt, or honey)
Sweet Potatoes
Prunes
Cheese & Garlic Soft Biscuits
Ravioli

Sounds like you've got it all figured out & under control!

If I were there I would have been hoping for a roast of some sort, but then I still have teeth....ham's probably your best bet!

do you have anything planned for dessert? A pumpkin pie or custard maybe?

Smoked turkey not ham. No creamed corn. More salad or slaw Baked Apples with splenda. No Ravoli. Watch your garlic because garlic is experienced as a little more bitter as you get older.

Can the residents not feel as though they have a choice in their Christmas dinner? What I mean is, why not do a sample survey of some of the foods you mentioned? Based on the survey results, plan from there.

It all sounds delicious and entirely appropriate...um...can I come?
But...where's the desserts? Surely not the prunes! I mean, I love prunes, especially stewed with some cinnamon, but for dessert?
I suggest apple and pumpkin pies. With maybe a little lite whipped cream.
And really, can I come?

that sounds very good but you need to remove the squash and add turkey and lobster and hush puppies with cold slaw

I think all that is great but where is the Turkey? I think Turkey is good for them also!
