Buy a ready made pie shell at the grocery store - I prefer a pre-baked cornbread crust. In medium skillet, brown 1lb hamburger & 1 medium onion chopped. Drain meat & layer in pie crust. Pour over 1 1/2 cups peas & carrots and 2 tbsp cream of mushroom soup. Cover top of pie with mashed potatoes then bake @ 350 for about 30 - 35 mniutes. The last 5 minutes, open oven & add 1 cup shredded cheese to top of pie.....Enjoy!!

Ingredients:
1 lb.ground beef
1 small chopped onion (1/2 cup)
1 pkg mixed vegtables
1 pkg Knorr brown gravy mix
6 med potatoes
1 pkg. grated cheddar cheese
Directions:
Brown gound beef and chopped onion together. Drain. Mix in thawed frozen vegtables. Stir in the gravy mix and amount of water the package calls for. Simmer till bubbly. Make mashed potatoes. Place beef mixture into either individual small ramekin or casserole dishes or use 1 large one. Top either with mashed potatoes and sprinkle cheddar cheese over the potatoes. Place in oven at 350 degrees until all is bubbly, and cheese melts.
use Gravy Master or other darkening agent (1 to 2 TBSP) to make the gravy a deep, rich dark brown after I have it all blended.

sautee a lb of lean ground beef stir in some crushed tomatoes or tomato paste. When almost cooked line the bottom of an oven safe square dish. Next I add a can of cream corn (my secret!) cause it keeps everything really moist and then last make mashed potatoes ( I use a few spoonfuls of sour cream) and layer on top of the cream corn. Grate your favorite cheese and throw it in the oven for 20 - 25 minutes at 350 degrees.

Didn't you ever watch Mother, Aunt, Uncle or Father make it, when you were growing up? 1 1/2 pounds potatoes, quartered and peeled. Bring to boil and cook until tender, about 15 minutes. Drain, reserving 1/2 cup of the water. Mash the potatoes with a fork or masher, adding the cooking water with: 1 TB butter
salt and ground white pepper to taste. Beat until fluffy. Preheat oven to 400 f. While the potatoes are cooking, heat in a medium skillet over medium low heat: 1 medium onion, chopped
1 carrot, peeled and chopped and 1 stalk of celery,c hopped.
Cook, stirring occasionally, until softened,a bout 15 minutes. Increase heat to medium and add 1 pound Left over cooked lamb or ground beef (I say ground beef, because that's what my mother always used. I think she cooked it , first.). Cook 5 minutes, stirring to evenly brown. Add 1 TB flour. Cook, stirring for 3 minutes. Add 3/4 cup vegetable or beef stock 1 TB chopped thyme or 1 tsp of dried thyme, followd by ground nutmeg and ground black pepper. Reduce heat to low and simmer, stirring occassionally, until thickened, about 5 minutes. Allow to cool slightly, then remove to a 9 inch pie pan or baking dish. Spread the mashed potatoes over the top, making irregular peaks with fork tines. Scatter over the top: 2 TBs cold butter, cut into pieces and bake until the potatoes are browned and the dish is heated through, 30 to 35 minutes. Allow to cool slighlty, then serve directly from the pan or baking dish.

"Shepherd's Pie" - 4 servings
2 tbsp. butter or margarine
2 cups cubed cooked lamb or beef
1 large onion; chopped
2 ribs celery; thinly sliced
2 tbsp. all-purpose flour
1/2 cup beef broth
2 tsp. Worcestershire sauce
2 cups hot, seasoned mashed potatoes
1) In 10" skillet over medium heat, in hot butter, cook lamb, onion and celery until vegetables are tender, stirring often. Stir in flour; stir in broth. Cook until mixture boils, stirring constantly; stir in Worcestershire. Turn meat mixture into 10x6" baking dish. Spread mashed potatoes over mixture.
2) Bake at 450* - 10 minutes or until potatoes are lightly browned.
(TIP: Prepare as above, but substitute 1 lb. ground lamb or beef for cubed meat; omit butter and increase beef broth to 1 cup. Cook meat with onion and celery as above; drain off fat. Proceed as above.)
