Beer Batter For Fried Chicken
Ingredients
2/3 c flour
1/2 ts salt
1/8 ts pepper
1 egg yolk; beaten
3/4 c flat beer
Instructions
Combine dry ingredients & set aside. Beat egg yolk & slowly add beer. Gradually add this to dry mixture. Moisten chicken. Dip in seasoned flour then dip in batter. Dip in seasoned flour again. Fry. (This may also be used for onion rings & other vegetables).

The simplest thing to do is what my mother always did. She opened a brown paper bag and added the following: a cup of flour garlic powder celery seed paprika salt a good amount of pepper dehydrated minced onion or onion powder finely crushed cornflakes she rinsed the chicken pieces under cold running water, tossed them into the bag a few at a time, shaking well. Then it was off to the cast iron skillet of hot Crisco. Be sure it is hot enough to make the flour sizzle and add the chicken. Cover for the first 5-7 minutes, then turn over and leave the lid off the skillet for cooking the other side and crisping the pieces. Works every time, and not just on chicken.

being from LOUISIANA , we know our fried chicken, WOOOOOHOOOOOO ! here is a recipe(spices included we use) enjoy it and HAPPY EATING !
Fried Chicken
12 chicken legs and thighs
1/2 cup flour
1/2 tsp paprika
1/2 tsp onion salt
1/2 tsp garlic salt
1/2 tsp celery salt
1/2 tsp black pepper
1/4 tsp red pepper
1/2 cup oil
1/4 cup butter
For better flavor and tender chicken, marinade the chicken in buttermilk seasoned with hot sauce or Worcestershire sauce the night before or a few hours before cooking.
Rinse chicken and dry well with a damp cloth. (Do not do this step if marinating the chicken in buttermilk; precede to the next step).
In a medium bowl, mix the flour with the seasonings. Pour the mixture into a paper bag. Coat the chicken pieces on all sides by placing in the bag and shaking two or three pieces at a time.

This is a spicy plantation buttermilk fried chicken recipe.
* 1 egg, slightly beaten
* 3/4 cup buttermilk
* 1 tablespoon vegetable oil
* 1 cup sifted all-purpose flour
* 1/2 teaspoon curry powder
* 1 1/2 teaspoons salt
* 1/4 teaspoon pepper
* 3 to 4 pounds chicken pieces, or 1 fryer, cut up
* vegetable oil for deep frying
Combine egg, buttermilk, and 1 tablespoon of oil. Sift together the flour, curry powder, salt, and pepper. Blend flour mixture into the buttermilk mixture; beat until smooth. Dip chicken pieces into batter; drain.Cook battered chicken in deep 350° oil for about 12 minutes, or until chicken is done.

This is supposed to be a copy-cat KFC recipe of spices!
1 tablespoon rosemary
1 tablespoon oregano
1 tablespoon ground sage
1 teaspoon powdered ginger
1 teaspoon marjoram
1 1/2 teaspoons thyme
3 tablespoons packed brown sugar
3 tablespoons dry minced parsley
1 teaspoon pepper
1 tablespoon paprika
2 tablespoons garlic salt
2 tablespoons onion salt
2 tablespoons chicken bouillon powder
(or 4 chicken bouillon cubes, crushed)
1 package lipton cup tomato soup mix
The recipe says to place all ingredients in blender and pulse for 3-4 minutes to grind well. Store in an airtight container. Makes about 3/4 cup. To use with flour, add 1 oz mix to 1 cup of flour for coating chicken.

CRISPY FRIED CHICKEN
2 1/2 - 3 lb. cut up frying chicken
Crisco for deep frying
SEASONED FLOUR:
1 1/2 c. flour
1 tbsp. garlic salt
1 tsp. pepper
1 1/2 tsp. paprika
1/4 tsp. poultry seasoning
Combine all ingredients. Set aside.
CRISPY BATTER:

1/2 tsp. salt
1/8 tsp. pepper

3/4 c. water
Combine flour and seasonings in a bowl. Combine water and egg yolk. Gradually add to dry ingredients. Heat Crisco to 365 degrees in deep pan or fryer to a depth of about 2". Moisten chicken pieces. Dip in seasoned flour then into batter then back in flour. Fry in hot Crisco for 15 to 18 minutes or until well browned. Drain on paper. 5 to 6 servings.

Easy Mexican Fried Chicken
"Great with Mexican rice and fried beans with cheese melted on top, if desired! Sort of 'On-The-Border Southern Fried Chicken'."
Original recipe yield: 4 servings
INGREDIENTS
4 skinless, boneless chicken breast halves
1 quart buttermilk
2 (1.25 ounce) packages taco seasoning mix
3 tablespoons olive oil
1 1/2 cups all-purpose flour
DIRECTIONS
In a resealable plastic bag combine the chicken, buttermilk and 1 packet of taco seasoning. Seal and shake to mix together. Refrigerate and let marinate overnight.
In a large skillet, heat the olive oil over medium low heat. Mix flour and the other packet of taco seasoning in a shallow dish or plate. Remove chicken from refrigerator and remove chicken from marinade. Discard marinade.
Coat chicken with flour mixture and fry in skillet until cooked through and juices run clear, 15 to 20 minutes.

HERES A PRETTY SIMPLE ONE FOR YOU..
1/2 c Flour
2 ts Salt
2 Eggs
5 tb Water
4 c Safflower oil
3 lb Chicken pieces
Black pepper
Mix flour, salt, eggs and water to make batter.
Cover and let rest 20 minutes.
Heat oil in deep fryer to 350°. Heat oven to 200°.
Dip each chicken piece in batter. Fry, a few
pieces at a time, in oil until crisp and brown
all over. Drain on paper towels, then keep warm in
oven while frying remaining chicken. Season with
salt and pepper; serve.
AND HERES ANOTHER ONE OF MY FAVORITE WAYS TO DO IT :)
CHICKEN FRIED IN BATTER
1 (2-3 lb.) chicken
1 c. milk
1 egg
1 tsp. baking powder
1 c. flour
1 tsp. salt
1 tsp. sugar
1/2 tsp. pepper
1/2 tsp. paprika
Beat egg and add milk. Add dry ingredients and beat until smooth. Dip pieces in batter and fry at 350-375 degrees in deep oil 15 minutes. Thicker pieces, fry for 20 minutes. You can also fry fish this way.

All good answer ahead of me. I would simply state that I find it simpler to just take plain flour, then using a all purpose seasoning found in the spice section of your local store, I add this to the flour until I find a taste I like and you have taste the flour mix. Then I take my chicken pieces, clean and rinse these. Dredge in the flour/spice mix, shake off excess flour and deep fry.

First season a bowl of milk with salt and pepper. Dip chicken in milk. Then roll in coating of flour, seasoned with salt and pepper, Old Bay Seasoning, seasoned salt and a dash of cayenne or paprika..
That way chicken is seasoned inside and out .
