Aside from Mimosas (Champagne & O.J.) you can make:
Kir Royale - Champagne & Chambord or Crème de Cassis
Bellini - Champagne & Peach Puree
Ghost - Champagne & Midori

This is more of a punch, but it is very good.

Red Velvet Punch-

1 (12 oz.) can frozen cranberry juice concentrate, diluted according to directions
1 (6oz.) can frozen orange juice concentrate, diluted according to directions
1 (6oz.) can frozen pineapple juice concentrate, diluted according to directions
1 cup fresh lemon juice
1-2 cups brandy
2 (750 milliliter) bottles Champagne, chilled

Combine first 5 ingredients, mixing well. Chill. To serve, pour chilled mixture into punch bowl and add Champagne. Add ice or ice ring as desired.

Try a bottle of "J" Champagne, straight. It is very good. You can find it at Cost Plus World Markets and Costco. It is in a green bottle with a simple yellow "J" on the front.

P.S. It is not expensive, about $15.00 a bottle.

Hmm....hope it is not an expensive Champagne cause Champagne needs to be savoured on it's own... Anyway you can have Buck's Fizz i.e Champagne with a bit of Orange juice and if you want to add a dash of exotic touché...add a drop of angostura bitters.
