Does anyone know how to make these? They are kind of like tortillas, but they are puffy, and they are a lot tastier.

2 cups coarseley ground cornflour
1 egg yolk
3 cups water
1 teaspoon salt
grated strong cheese, cream cheese,ham,anything you want to fill them with
oil (for deep frying)



1. Mix the water and the egg yolk.
2. In a large bowl mix the flour and the egg/water mixture.
3. Mix and kneed the dough for about 5 minutes until it is compact.
4. Cover with a damp cloth and set aside for 5 minutes.
5. Meanwhile heat a deep fryer to 170º C, or fill a frying pan with lots of oil and heat.
6. Take a small ball of the dough, the size of an egg and mold into a flat circle, about 1 cm thick.
7. Fry until golden brown, turning regularly.
8. Turn out onto crumpled absorbent paper and leave to cool slightley.
9. Split them open (Lilke a Pita Bread) and fill with cheese, ham, butter, honey or whatever you wish (If there is too much"fluff" inside you can remove it with a spoon, leaving only the outer shell).
10. Serve inmediatley, they dont keep and dont re-heat.

Bananas Fritas

4 firm bananas
2 cup beer batter
1 oil for deep-frying
1/2 lemon, juice of
1/2 cup honey
1 pint vanilla ice cream or
1 cup flavored whipped cream

Servings: 4 Peel bananas & split each into 3 sections lengthwise. Dip the sections into beer batter, shake off excess batter, and slip the bananas into 350 degree cooking oil. Cook on all sides,turning carefully, until batter is crisp and golden. Arrange fried bananas on 4 dessert plates and sprinkle with lemon juice and honey. Top with ice cream or flavored whipped cream and serve immediately. If you use whipped cream as a topping flavor it with a little sugar and almond extract.
