Maple Glazed is great. Serves four.

3 tablespoons maple syrup
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
1 1/2 teaspoons cornstarch, dissolved in
1 tablespoon water
4 salmon fillets
1 scallion, sliced thin (white part plus about 2-3 inches of the green)
1 tablespoon toasted sliced almonds (optional)

1. In a small bowl whisk together the syrup through cornstarch solution until smooth.
2. Place the fillets skin-side-down in a shallow baking pan.
3. Pour the syrup mixture over the salmon.
4. Bake about 15-18 minutes at 450°F until the fish flakes easily; baste with glaze halfway through cooking.
5. Sprinkle with scallion and almonds before serving.

You didn't specify whole, fillets or canned - here goes...

"Salmon Loaf" - 6 servings

2 tbsp. butter or margarine
1 small onion; finely chopped
1 (15 oz.) can salmon
1 3/4 cups soft bread crumbs
1/2 cup mayonnaise
1/4 cup milk
2/ tbsp. lemon juice
1 tbsp. chopped parsley
2 eggs
1/2 tsp. salt
1/8 tsp. pepper

1) Grease 8x4" loaf pan. In 6" skillet over medium-high heat, in hot butter, cook onion until tender.
2) In large bowl, combine cooked onion with remaining ingredients (except sauce); mix well. Spread into prepared pan.
3) Bake at 350* for 50-60 minutes until set in center. Cool on wire rack 10 minutes.
TUNA LOAF: Prepare as above, but substitute 2 (7 oz.) cans water-packed tuna; drained, for the salmon.

Here's the simplest, tastiest way to serve salmon that I know- the technique is called shioyaki, which is Japanese for "salt broil". Lay out your salmon in your pan or on foil, and liberally sprinkle all surfaces with salt. Let it sit on your counter for about 45 minutes, and then grill it on a medium-hot grill, or broil in a broiler, 10 minutes per pound. Very tasty, very simple, and serves well with lemons, Hollandaise sauce, or other fish-oriented sauces (even bechamel with dill added!) Good luck-

heat some olive oil & dill in a pan to med-high heat, stick it in there (covered, or you will have oil splattered all over your stove) for 7-9 minutes per side or until its cooked all the way through, serve with lemon juice, capers and dill mayo (just mix some dill into some mayo).

Goes really well w/ wild rice & steamed asparagus.

Bobby's Pan Grilled Salmon with Yellow Pepper Saffron Sauce

2 salmon fillets, 6 ounces each with skin on
1 tablespoon olive oil
Sea salt and ancho chile pepper powder, to taste
1/4 yellow bell pepper, finely chopped
1/4 red bell pepper, finely chopped

For the sauce:

1 large yellow bell pepper, roasted
3 tablespoons rice wine vinegar
3 large cloves garlic, coarsely shopped
Pinch of saffron threads, pan toasted
1 1/2 teaspoons honey
1/2 teaspoon Dijon mustard
Scant 2/3-cup extra virgin olive oil
Coarse salt and freshly ground black pepper to taste

To prepare:

Make the sauce, up to 6 hours ahead. Coarsely chop the roasted pepper.

In a small dry skillet over high heat, toast the saffron threads shaking the pan continuously, until they become aromatic, about 1 minute. Immediately remove from the heat.

In a blender or food processor, combine the roasted pepper, vinegar, garlic, saffron, honey, and mustard. Blend for 30 seconds. Through the feeding tube, slowly add the oil until the sauce emulsifies. Transfer to a bowl; season to taste with salt and pepper. Cover with plastic wrap and
set-aside until serving time.

To pan-grill the salmon:

Place a grill pan over high heat and heat it until smoking. Brush the salmon on both sides with olive oil and sprinkle with salt and ancho chile pepper. Grill; skin side down until golden brown, about 3 minutes. Turn over, lower the heat to medium and continue cooking for 3 to 4 minutes.
Transfer the salmon to a warm dinner plate; drizzle with the sauce on the fish and plate. Garnish with finely chopped red and yellow peppers. Serve at once.
