The best way to bid this is to estimate how long its going to take you and figure on a price that you want to make per day.
Estimate things to take longer than you think because they always do. Your going to need at least 3 20 yard dumpsters. I pay 275 for each one. Plumbing, electrical, Hvac is a breeze providing that the main shut valve for the water is in good shape. Be sure to recycle your scrap, a house we just did brought us in an extra $400. Lath and plaster is long, tedius, heavy work. A 2000 sq. ft house would probable take me and two guys 3 to 4 days to demo and carry out to the dumpster (just tearing out the plaster and lathe). I figure 200 per day per man for billing. I may only pay them 10 per hour. My best guess for you (not seeing the project), and hopefully not having to work around home owner items they want saved: FOR TWO MEN PER DAY
PLASTER AND LATHE 5 DAYS $2000
HVAC, PLUMBING, ELECTRICAL 1.5 DAYS $600
INSULATION 1 DAY $400
DUMPSTERS $750
MISC. TIME MATERIALS $200
TOTAL $3,950 $2.00 PER SQ. FT.
If you think you can eliminate a day or two bid it at 3,400 ...I wouldn't go lower unless your alternative is to sit at home and watch Scooby Doo. Then theres the Scooby Doo price, and take off a grand from the bid and keep from swearing and smashing your good tools for nothing....

I recently had a choice between gutting and selective demo and pure demo. Pure demo, by which I mean I took the house down to the flooring on the first floor -- walls, roof, windowns, etc -- saved me a ton of money.
The initial demo was done in a day with an excavator with a thumb. Including the follow-up labor, dumpsters (9), etc, It cost me around $7,000.
Selective demo is time consuming. It would have taken weeks. Selective demo presents work around problems when you try to match up new and old construction.

it depends on the market area. Contractors, just like everyone else adjust prices according to demographics. I would suggest calling 3 different contractors and having them write you up and estimate and go with not the cheapest, but the one who's going to get it done the fastest. Time is money...not to mention, you don't want to be out of your home any longer than you have to....
