4 boneless, skinless chicken breast halves
1 (3-ounce) package cream cheese, softened
4 teaspoons minced green onion
1 teaspoon dried tarragon leaves

Split each breast horizontally, making a pocket and leaving one edge intact. Set aside.
Combine cream cheese, green onion, tarragon, and black pepper. Spoon 1/4 cheese mixture into the pocket of each breast. Wrap each with 2 slices bacon and secure with wooden picks.

Saut`eed Chicken Cutlets With Lime Sauce heres how you make it....
Makes 4 Servings... Time:25
This crisp chicken with a light, soy-based lime sauce might have been concideredexotic a few years ago... now its fit for a weeknight.
What you need...
4 boneless, skinless chicken cutlets (chicken breasts), 1 to 1 1/2 pounds, rinsed and patted dry with paper towels
salt and freshly ground black pepper to taste
1 cup cornmeal
3 tablespoons peanut butter or other oil
1 lime, thinly sliced
1 tablespoon minced garlic
1 tablespoon minced shallot or onion
1/2 cup dry white wine or chicken, or vegtable stock, or water
1 tablespoon soy sauce
Juice of 1 lime
Minced cilantro leaves for garnish
Steps...
1) Heat a large skillet, perferably non-stick, over medium-high heat for two or three minutes. Preheat the oven to 200 degrees F*. Meanwhile, sprinkle the chicken breasts w/ salt and pepper & place the cornmeal on a plate or in a shallow bowl.
2) Add the oil to the skillet and swirl it around. When it is HOT- a pinch of cornmeal will ~sizzle~ dredge a piece of chicken in the coating, pressing it down a bit so that the coating gets into the cracks and crevices. Shake it a little so that excess coating falls off. Add the chicken peice to the pan, then move on to the next one. DO NOT ADD ALL THE PIECES TO THE PAN TOO QUICKLY.
3)Cook the chicken, regulating the heat iff messesary so that there is a good constant sizzle but no burning. After 2 minutes, rotate the chicken DO NOT FILP IT so that the putside edges are moved toward the center and vice versa. after 3 or 4 minutes when the pieces are brown turn them over.
4)Cook on the 2nd side about3 minutes until the chicken breasts are just firm to the touch. If you are unsure whether they are done cut into one with a thin-bladed knife the center should be white or slightly pink. Remove the chicken decorate with the lime slices and place it in the oven.
5)With the heat on medium add the garlic and shallot to the pan and cook stirring for 1 minute add the liquid and let it bubble away stirring and scraping the bottom of the pan for 1 minute.
6)Add the soy sauce and half the lime juice. cook for 10 seconds then spoon this sauce over the chicken. drizzle with the remaining lime juice, garnish, and serve.

Buy a loaf of uncut French Bread, a bagged salad, and some really good creamed soup (I like butternut squash soup). Kick the soup up with some spices (turmeric and chili powder and salt and pepper are my favorite) while you warm the bread in a 300 degree oven.
The problem is that you didn't give the number of people you're feeding, if it's for guests or just family, and if it's cold where you are, otherwise I could do more than just give you what I want for dinner tonight. ;-)

Rack of Lamb. My favorite week night meal. Quick to fix, welcome every time and, there's always enough for a friend or two.
Preheat oven to 375.
After removing the rack from it's shrink wrap, pat it dry with a paper towel. Sal and pepper the meat generously. Lightly slide a knife across the fatty side of (the back) the lamb in a large hatch pattern. Slice between the chops to a shallow depth of about 1/4 inch. Smear the rack all over with garlic butter (prepared or mixed to your own taste by you). Then, I press my buttered lamb into a plate of finely crushed chichorillas (deep fried pork rinds or skins-no carbs) and place on a rack in a glass baking dish. Then, drizzle with mint oil, you will find it in the section with the mint jelly (which you might also want to pick up and serve with your lamb). Bake for 30 minutes for rare, 35 will be barely pink and 40 will be very well done. Let rest for about 3-5 minutes before carving.
I serve lamb with small red potatos, semi peeled (leaving strips of red) par boiled and served with a simple creamy butter sauce:
About 3 potatos per person,
1/4 cup butter
Add dill, cilantro or parsely (fresh or dried) to taste.
Heat until bubbly and add a splash of cream, stir and pour over the potatos.
Serve with a green veggie, on weeknights, I use cannes asparagus.
I buy my lamb at Costco for about 12-15$ a rack as my grocer prices them out of my range at about 35-40$ a rack (a rack will serve 3 people or, in our case, 2 adults and 2 hungry Bichons).

Chicken Parmigiana
INGREDIENTS
1 egg, beaten
2 ounces dry bread crumbs
2 skinless, boneless chicken breast halves
3/4 (16 ounce) jar spaghetti sauce
2 ounces shredded mozzarella cheese
1/4 cup grated Parmesan cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
Pour egg into a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into egg, then into the bread crumbs. Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until no longer pink and juices run clear.
Pour 1/2 of the spaghetti sauce into a 7x11 inch baking dish. Place chicken over sauce, and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top and return to the preheated oven for 20 minutes.
OR
Hot Shrimp
Ingredients:
1/4 teaspoon salt
1 clove crushed garlic
4 Tablespoons Butter
1/2 lbs. Shrimp (in shell)
1-2 Tablespoons Tuong OT Sriragna(Hot Chili Sauce)*
2 Tablespoons White Wine
Cooking Instructions:
Sprinkle salt on bottom of preheated fry pan. Add butter and sauté garlic on "medium high" heat. When garlic is slightly brown, add shrimp and stir fry until almost cooked (nearly red). Add chili sauce evenly. Add white wine. Toss briskly until wine evaporates or shrimp is cooked. DO NOT OVERCOOK. Should be cooked in 1/2 lb batch in large fry pan to avoid boiling shrimp. TIP: Hot chili sauce can be found in China Town, Asian stores
Some of my Favorites :)) I hope this helped :)

Are his funds issues unlawful? If no longer then i detect it style of shallow that you would favor to call off a wedding ceremony because the guy you want isn't financially solid. economic stability does no longer continuously =happiness. believe me, i might want to fairly be broke and in love than wealthy and depressing. despite the indisputable fact that it does sound like he's were given some subject matters he needs to workout recurring, the total mind washing ingredient although that is about. So i might want to ask him til he receives issues immediately to positioned off the marriage. Or take the different chics suggestion and in case you do get married, haven't got little ones directly or for awhile til he receives issues immediately which include his subject matters.

How about good old spaghetti with meat sauce and garlic bread and a salad?
Already had that this week? How about white bean soup with cornbread?
Don't like that? How about breakfast for dinner? Eggs, bacon, toast, decaf coffee, blueberry muffins, orange juice?
