On the back of a pancake/waffle mix, in the pancake section it is just oil, milk/water, etc. But on the Waffle recipe it calls for an egg? Why? So when you fry them on a griddle, you aren't supposed to use an egg? Eggs are only for when using a waffle iron machine? Well I just say screw it and use an egg when I make pancakes on a griddle... what is your take on this?

Eggs act as a leavening agent... which is not a big deal for pancakes, but won't hurt if you do add them.

The pancake mix already has powdered egg in it. When you make waffles, the egg-stra (he-he) protein is needed to hold the waffle together. If you poured pancake batter into the waffle iron, they would fall apart when you tried to remove them. The added protein also helps to trap the gas bubbles and steam formed by the leavening and the water, so they will hold the weight of the waffle iron while the batter cooks. The plain pancake batter wouldn't be able to hold the gasses, and the result is a crumbly, dry, and flat waffle.

Waffle recipes call for egg because the eggs make waffles rise better in the waffle iron. Pancakes are not compressed, so they don't need "help" rising.

because pancakes have the oil and usualy its one or the other and the waffles use egg because they don't stay soft and smooth they get crunchy and stiff when cooked like they call for eggs in bisquick mixes some do some don't

Waffles need to be fluffier to rise up into the other chamber.
Waffles also have more butter in the recipe.

Go ahead and put eggs in your pancakes....you rebel! ;)

pancake mixes have all the things they need in the powder (besides water ect.)on the other hand waffel mixes do not have evrything they need.
