I do mine at 425 for 15 minutes then back it down to 350 for an additional 35-40 minutes..this helps prevent the crust from burning.

One of the biggest problems with pumpkin pie baking is that a person will buy cans of pumpkin pie mix, then use that to make a separate recipe for pumpkin pie that calls for plain canned pumpkin. This error is easy to do, because the cans are usually near each other at the grocery store and they look almost the same. Check your pumpkin cans and see if this is what you did. Pumpkin pie mix has added sugar, spices and other ingredients. If you have made a from-scratch recipe using pre-sweetened pie mix, it is going to taste very sweet and over-seasoned. Another problem would be if you put too much liquid in the recipe by accident. Another problem would be if your oven's temperature isn't correct (in your case, your oven is running cooler than the thermostat says). Don't worry about the crust overcooking. If the edges are getting too brown, take several 3" to 4" wide strips of aluminum foil, and wrap them around the edge of your pie. This will stop the edges from browning any more. Your pie is done if just the center few inches is a bit jiggly, but not the whole thing. A knife inserted dead-center of the pie should have some streaks of liquid and a bit of pumpkin on it, but shouldn't be covered with wet pumpkin. Give the pie up to 90 minutes. If it's not done then, you need to find out what the problem is, either the recipe or the temperature of your oven (borrow or buy an oven thermometer, and check to see if your oven is really the temperature your thermostat says it is).

well I have never baked a pie before but I'll offer this up and hope it helps..most pies you can tell that it's done when you can stick a toothpick in the middle and very little comes out attached....with a pumpkin pie though it's mostly filling so take that into consideration if you try this...also pay attention to the crust if it starts to get to brown and you want to keep the pie in there longer because you are questioning if you have cooked the filling long enough put a pie tin over the top upside down and that will force the heat to the center cooking it from the center out rather than the out in this will slow the cooking of the crust down.

Okay, bake the pie at 425 degrees F for 15 minutes to bake the crust then turn it down to 350 degrees F for 20-30 minutes to cook the pumpkin custard filling, checking by gently shaking the pie. If the center rolls a little (like it is liquid, still), then give another 5 minutes.
I baked four pumpkin pies this year, using canned mix and my own homemade crust.

From the Libby's Pumpkin Pie Recipe...
BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

OLGA's PUMPKIN PIE:
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 1/2 cups pumpkin puree, canned or fresh
1 (12oz.) can evaporated milk
2 eggs, lightly beaten
1 unbaked pastry shell (9-inch)
Combine sugar, salt, and spices in a large mixing bowl. Add pumpkin, evaporated milk, and eggs; mix well. Pour into pastry-lined pie pan. Bake at 425 degrees for 15 minutes. Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge. Reduce heat to 350 degrees and bake 40 minutes or until center is set.

What I do is, first bakie for 15 minutes at 425, then turn it down to 350 and bake for 50 minutes. Test it by sticking a dinner knife or tooth pick in the center, but I gurantee you it will be done. Of course, that's making two pies.

bake for 375 for 40 minutes, check with a knife or toothpick stuck near the center, if it comes out clean then the pie is done. You may need to cover the sides of the crust with foil if they are getting too dark too quick.

The standard pumpkin pie bakes at 350F for 55 min. Try this and just watch it to make sure it doesnt burn. You can place twisted up aluminum foil around the crust to prevent crust burning.
