i dont have any wine, or anything like that..can i use anything else i might have on hand ?or just leave it out? what would that do?

If you have no cooking wine at all, you can use chicken broth, apple juice (which I think would be good) or just water.

You can substitute any liquid for sherry. In the recipe the sherry adds more flavor then anything else since the alcohol burns off during the cooking process. I would use broth, stock, wine, brandy or even water as a substitute.

I had Knorr homestyle veg broth tubs on hand (Target sells them), so I dissolved one in 1 cup of boiling (tea kettle) water, then basically added a one to one vinegar to water ratio til the final solution was 3.5 cups (adapted from directions on the Knorr packaging).

Sherry has a nutty flavor, so I incorporated 1 can whole chestnuts, packing water and all, counted it as water. For vinegar, I have a lovely fig vinegar on hand, and spiced it up with Worcheshire. Didn't measure anything really, just eyeballed it in a 4 cup (1 qt) pyrex pour spout measurer thingie, again, always keeping the 1:1 ratio in mind. No salt, no pepper, no garlic, nothing added. And you know what, it was very delicious on my taste test before I used it in my slow cooker pot roast. So thanks for the examples guys! Thought I'd add mine to help someone out there in Google (or Bing) land. That's the best way to describe it. F---ing delicious sherry substitute. Written by a Sherri. Ha ha! i'd say try it twice once without it and once with your fav. juice ex. apple, grape, or peach!
