I don't necessarily want to hear which one it is, but do you believe that there is or should be only one true church/religion/belief/gospel?

Yes, there is one way. One Almighty God, One Lord, One faith. There are many many false prophets in the world. Jesus is the true shepherd of the sheep fold.Jesus is the door. Many say they have the one, true way. But you shall know them by their fruits.

NO NO NO NO NO, and NO. I spent 6 years in the U.S. military defending everyone's right to worship as they want, including not to worship.
There is no ONE true religion for everyone but there is A religion that is true for each individual, even if it is no faith.

I believe that there is one Universal Truth (and yes, there are many individual truths as well)...and that different religions have answers to different parts of this truth. Truth is a puzzle, and each religion or lack of religion holds different pieces to create the puzzle.

Why would you think there is only one way to one God ?
As for SHOULD there be, why no. I like my freedom of choice (or the illusion thereof).

Nope. I believe each path is the correct path for the person walking it. All gods exist, but a god has no control over one that does not follow him or her. Therefore, what happens to you when you die is dependent on which god you believe in.
