Who said Christmas had to be all about turkey and stuffing? Make a theme out of it, and don't be afraid to try something new and different (this year we're going Italian and having lasagna)...I'd like to suggest my Tex Mex lime chicken.....

Use 1-2 lbs of chicken fillets or tenders
1 lime, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 red bell pepper, sliced
1 habanero pepper, diced as small as you can get it (optional)
1 medium onion, diced
1 jar of salsa (heat depends on how you like it)
1 bag of white corn tortilla chips (restaurant style)
olive oil

In a medium skillet with 2tbsp olive oil, add chicken and onions...cook for about 5 minutes...add half of the lime slices and cook until chicken is done all the way through.
Add peppers to chicken, cover, and cook for about 5 minutes (enough to heat the peppers up, but not to cook them until they are soft)
Put chicken on top of chips and salsa and add remaining lime slices as a garnish. Adding a little cream cheese is good, also. This recipe serves 5-6 people

To go along with your theme, you can have guacamole sauce and chips, tortillas and refried beans, Mexican rice....the possibilities are stupendous. Oh, and keep some pepcid AC around for the more sensitive folks. :) enjoy!

Seafood manicotti
1 box manicotti tubes(partially cooked-just before al-dente-about 5 minutes)
1 lb frozen shrimp (deveined- tail-off if you can find-easier!)rinsed, drained and dried
1 lb good lump crab meat (pick over for cartalige)
1/2 chopped scallions(green onions)
2-3 cloves chopped garlic
1/2 cup parmesan
1 cup of mayo
1/2 lemon juiced
salt and pepper
heavy cream (enough to make mixture moist)
mix all above ingredients(except pasta) and add enough of the heavy cream so the mixture is soft but not runny-
stuff a good amount into the cooked pasta(cook the pasta only till al-dente)line up in a large lasgna pan or cake pan
then find a good marinara sauce-I like the Classico marinara or tomato and basil- the simpler the better so you don't over power the flavour of the seafood-then you pour a jar of the sauce over the pasta and top with some parmesan and mozzerela
bake for 30 min. at 375
find some of the best garlic bread you can and make a ceasar salad to start.
finish with your favourite pie- I like our cherry cheesecake-
It will look like you took forever to make-tastes awesome and feeds alot-one of this recipe should feed 4-5 generously-
if you have guests that don't like seafood put a italian sausage stuffing in some of the manicotti-
cook a lb of italian sausage just till done add 1/2 cup parmesan 1/4 cup seasoned bread crumbs and 2 eggs-then stuff this mixture in the pasta same procedure as above.
I agree with the no turkey rule- I always make special recipes like this for christmas;

Don't forget the cookies for Santa. I heard he really likes snickerdoodles (at least I do). Here's a good recipe for them.
