For my family Christmas get together we are having a different meal this year. Instead of the normal turkey and ham, mashed potatoes and such, we are having hot roast beef sandwiches with onions and peppers. I need some suggestions as to what would go with that. The desserts are taken care of. We wouldn't dare let our mom not make the same stuff this year! Someone will bring a relish tray and dip for sure. I need suggestions for side dishes.

Scalloped potatoes, a big green Caesar salad, asparagus, and of course, horseradish on the side with the au jus. Maybe even some dressed up baked beans?

try to make cold salad. simple and easy. chop up a couple of apples leave skin on add chopped walnuts and mix this with lettuce make a dressing out of mayo, sugar and milk. serve cold .
this makes a nice sweet tasting side dish.

How about crackers, cheese and pepperoni as a side dish for appetizers, what about potato or macaroni salad, maybe pickles, chips, macaroni and cheese.

NANCY's ITALIAN BEAN SALAD:
1 large green pepper, sliced in strips
2 small onions, sliced thin
1 medium can chick beans, rinsed - drained
1 medium can kidney beans, rinsed - drained
1 medium can cannellini beans, rinsed - drained
1 small can string beans, rinsed - drained
1 small can wax beans, rinsed - drained
1 small can lima beans, rinsed- drained
1/3 cup oil
2/3 cup white vinegar
1 cup sugar
1/2 teaspoon salt
1/4 teaspoon pepper
In large bowl, mix together beans with peppers and onions. In small bowl whisk oil, vinegar, sugar, salt and pepper. Add dressing over beans. Toss to coat. Cover. Refrigerate. Marinate overnight.

OLGA's RED CABBAGE:
1 large head red cabbage
2 Tablespoons bacon fat or oil
1/2 cup red wine
3 Tablespoons red currant jelly
1 teaspoon salt
dash of white pepper
pinch of powdered cloves
1 teaspoon sugar
Wash, shred and drain red cabbage. Heat bacon fat or oil in large pot. Add cabbage; heat 5 minutes. Add remaining ingredients. Stir well. Continue to stir a few minutes until all flavors are absorbed. Cover; cook cabbage over low heat 25 minutes. Serve hot.

TOMATO MOZZARELLA CASSEROLE:
1 1/4 cups packaged Onion and Garlic Croutons
3 medium ripe tomatoes, sliced 1/4 inch thick
6 ounces shredded mozzarella cheese
1 Tablespoon dried oregano
1 Tablespoon dried basil leaves
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
salt and pepper to taste
3 to 4 Tablespoons bottled Italian OR Vinaigrette Dressing
Scatter croutons over bottom of a 10" glass pie dish. Overlap with tomatoes in a circular pattern to cover croutons. Sprinkle mozzarella cheese over tomatoes. In a small bowl mix together oregano, basil, onion powder, garlic powder, salt and pepper. Sprinkle herbs and seasoning mixture over cheese. Microwave, uncovered, on HIGH for 3 1/2 to 4 1/2 minutes or until cheese is melted. Remove and spoon dressing over top. Poke holes to let dressing drain to croutons. Let stand for 5 minutes for flavors to develop. Serve Warm.
