Please not BBQ. I don't feel like cooking and I have run out of good fast ideas!

I use this recipe a lot for chicken pieces...

Crispy Herb Baked Chicken
Prep Time: 10 min ; Start to Finish: 1 hr 10 min
Makes: 4 servings Nutrition Information

Here's one of our "most requested" recipes. The Parmesan-potato mixture bakes up golden and crisp, sealing in the chicken's natural juices. It's as delicious as fried chicken--but with a lot less fuss.

2/3 cup mashed potato flakes
1/3 cup grated Parmesan cheese
2 teaspoons dried parsley flakes, if desired
3/4 to 1 teaspoon garlic salt
1 (3 to 3 1/2-lb.) cut-up frying chicken, skinned if desired
1/3 cup margarine or butter, melted

1 . Heat oven to 375°F. Grease, or line with foil and grease 15x10x1-inch baking pan or 13x9-inch pan.
2 . In medium bowl, combine potato flakes, Parmesan cheese, parsley flakes and garlic salt; mix well. Dip chicken pieces in margarine; roll in potato flake mixture to coat. Place in greased pan.
3 . Bake at 375°F. for 45 to 60 minutes or until chicken is fork-tender and juices run clear.

To reduce fat, dip chicken pieces in 1/3 cup milk instead of margarine.

INGREDIENTS

* 4 chicken leg quarters
* 1 (4.5 ounce) package instant long grain and wild rice
* 2 cups water
* 1 (10.75 ounce) can condensed cream of chicken soup
* 1 (8 ounce) container sour cream
* 2 cloves garlic, crushed
* 1 tablespoon minced garlic
* 1 cup chopped broccoli

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. Place chicken quarters in a 9x13 inch baking dish and bake in preheated oven, covered, for 45 minutes.
3. Meanwhile, in a large bowl combine rice and seasoning packages, water, soup, sour cream, crushed garlic, minced garlic and broccoli. Mix well.
4. Remove chicken to a platter and drain oil. Spread rice mixture in the bottom of the baking dish, then arrange chicken on top of rice. Bake uncovered for 30 to 45 minutes, or until wild rice is opened up and liquid is absorbed.

Do you have any plain potato chips? my mom used to crush the chips really small and after boiling the chicken for about 20 minutes, she would roll the chicken in either melted butter or eggs, then roll the chicken into the chips then bake for about 1/2 hour or so. nice and crunchy but lots of taste. Good luck.

Buy a bottle of teriyaki basting sauce. Pour over legs and marinate for about an hour or two. Then bake at 350 uncovered for 45 minutes. Serve with rice or couscous and steamed broccoli.

Place them in a pan with some potatoe wedges. Sprinkle with your fave herbs and salts then put it in the oven to bake until skin is golden/brown and potatoes are done. I don't know all the details since I wing it most of the time but I seen the recipe in a Kraft Food mag.

Marinate the chicken in Zesty Italian dressing for at least 30 minutes, then grill or broil. It is great.

Take and skin them, then pour a little bit of Raspberry vinaigrette on them.Bake at 350 for about 45 mins.Tastes great with a salad,corn,and fresh bread.EASY.
