Try a one pot dinner like corned beeef and cabbage. Cook the corned beef in a large kettle for several hours and before done add in whole potatoes, cabbages sliced in quarter wedges, carrots, celery and whoe onions. Cook further until the veggies are tender. You can cook this in under an hour if you have a pressure cooker.

Well, I can make something good out of almost anything, but your regular stuff might be stuff that I rarely have. Either way, I'll give you a recipe for Chicken Taco and Rice that will be pretty good, unless you have Mexican food a lot.
1 lb chicken breast, chopped
2 meduim bell peppers, any color, diced
1 T vegetable oil.
1 packet of Taco seasoning
1 teaspoon salt
1 dash pepper
2 cups rice (Minute works best)
Grated cheddar cheese
Saute the chicken in the oil until fully cooked. Add the peppers and cook for about 5 minutes. Mix the taco seasoning with warm water and add with other spices. Bring to a boil. Add rice and let simmer for 5-10 minutes, until rice is cooked. Add cheese on the top and enjoy.

Okay this is super easy, and super good. I call it :
Cheeze-It Chicken
Here is what you need:
4 chicken breast
1 stick of butter melted
approx 2-4 cups crushed cheez-its (give or take, depending on the size of breast)
4-6 rectangular long strips of Velveeta Cheese
1. Preheat oven to 350 degrees.
2. Dip your chicken in the melted butter.
3. Dip chicken in crushed cheez-its.
4. Place Velveeta cheese in center of chicken and roll up like a carpet. (you may pound chicken thinner to cut down cooking time and bulkiness of chicken. If you do, make sure to do that before you dip into butter)
5. Place in round or square pan tightly.
6. Drizzle leftover butter on top.
7. Pour a little of the remaining cheez-its over dish.
8. Add a few extra pieces of the velveeta cheese (cubed) to casserole.
9. Place in 350 degree oven for 1 hour or until juices run clear.
Serve with steamed rice and sweet corn...
Makes a great meal. You could also make ahead of time (like before you go to work )and always reheat or cook it when you get home.

I dont know what the regular stuff is for you, but I love making pasta, its so easy to make and you can mix it with anything. I make this parmassan chicken pasta that looks like I slaved all day in the kitchen. Here's what I do: I put water to boil so that I can cook my spaghetti (or whatever pasta I have on hand). In the mean time, I fry or grill my already sliced up chicken breasts (I order them ready at the meat department, like fillets) when the chicken is done (the thinner they are they faster they cook) I place them in a lasagna dish or some kind of dish for the oven and I pour some spaghetti sauce and cheese on top of them and put them in the oven for like 10 minutes. In the meantime I drain my pasta, plate it and pour some spaghetti sauce on top of that (make sure you heat the sauce first), then I get my chicken out of the oven, place a fillet on top of the pasta and shake some parmassan cheese on top of it. It looks great, its so easy to do, and my husband always thinks I spent so much time making it for him in the kitchen that he washes the dishes.

Cook chicken breasts in Italian dressing (not the creamy kind) and when chicken is cooked through, top with cooked bacon and provolone cheese. Serve over rice that was cooked in chicken broth instead of water. Add a green veggie and you are good to go.

toast an english muffin, put an easy over fried egg on it. on the egg put a slice of black forest ham. on the ham put shredded onion. on the onion put shredded cheddar. sprinkle the top with dill and parsley then microwave for a few seconds til the cheese melts.
