... that's not a stir fry! I've also got other stuff around, like ground beef and chicken, pasta etc. I'm just out of interesting ideas for my vegetables :p

You could do a vegetable curry, if you like Indian food. Or do a pasta or potatoe bake with meat and veggies.

Vegetable Curry

INGREDIENTS
1/4 cup butter
2 tablespoons olive oil
1/2 large onion, finely chopped
2 large carrots, sliced
2 tablespoons curry powder
1/2 teaspoon ground turmeric
salt and ground black pepper to taste
1 pinch red pepper flakes
1 head cauliflower, broken into small florets
2 large potatoes, peeled and cubed

Heat the butter and olive oil in a large skillet over medium heat. Add the onion and carrots; cook and stir until tender. Season with curry powder, turmeric, salt, pepper, and red pepper flakes.

Add the cauliflower and potatoes to the pan, and stir to coat with spices. Reduce heat to medium-low, cover, and simmer for 20 minutes, or until the potatoes are tender. Stir occasionally.

Vegetable Curry

Browning curry powder intensifies its flavor and color.

1/2 head cauliflower, cored and cut into florets
2 potatoes, peeled and diced
8 tbsp. clarified butter
1 medium yellow onion, peeled and minced
1 green apple, peeled, cored, and minced
3 cloves garlic, peeled and minced
8 whole shallots, peeled
2 tbsp. minced peeled fresh ginger
2 tbsp. curry powder
1 tbsp. flour
1 14-oz. can coconut milk
1 16-oz. can chickpeas, drained
1 lb. spinach, washed and coarsely chopped

1. Parboil cauliflower in a large pot of water for 5 minutes. Drain in a colander and rinse with cold water. Repeat process with potatoes. Set both aside.

2. Heat butter in a skillet over medium-high heat. Add onions, apples, garlic, shallots, and ginger, and cook until onions are golden, about 10 minutes.

3. Add curry powder and cook, stirring frequently, until mixture turns dark brown, about 8 minutes. Stir in flour and cook another 2 minutes.

4. Add coconut milk, chickpeas, cauliflower, potatoes, and 1/2 cup water. Lower heat to medium, cover, and cook 15 minutes. Add spinach, cover, and cook until wilted, about 3 minutes. Serve warm over rice with condiments such as raisins, flaked coconut, chopped cilantro, and toasted cashews.

If you have chicken you can make oven packets for dinner.
Take one- two pieces of chicken, boneless breast works great, place it on a piece of aluminum foil. Place cleaned carrots, onions, garlic, green peppers, and even potatoes, sliced around the chicken. Season with salt and pepper to taste. Wrap the foil around all ingredients on the foil, making sure to crimp the edges so none of the juice runs out. Bake at 350 degrees for about 1 hour, checking to make sure that the chicken is done. If not put back in oven for 10-15 minutes more.
Now for the broccoli, cauliflower, and tomatoes, you can make a salad. Clean the veggies and cut into small pieces, combine in bowl and mix with either ranch dressing or italian dressing. This makes a great salad that lasts up to a week in the fridge.

You could make an Asian Veggie Noodle bowl. Use the veggies in place of the spinach, and whatever chicken or beef you have.

Asian Chicken Noodle Bowl

4 Fresh Boneless, Skinless Chicken Thigh Cutlets or 4 Boneless, Skinless Chicken Thighs
3/4 teaspoon Asian five-spice powder
3 cans reduced-sodium chicken broth
1/4 teaspoon pepper
1/8 teaspoon salt
2 teaspoons vegetable oil
2 large garlic cloves, finely chopped
1 tablespoon soy sauce
1 package fresh angel hair pasta, 9 oz.
1 bag baby spinach, 6 oz.

Combine five-spice powder, pepper and salt in cup. Cut chicken into 1-inch pieces. Rub spices onto chicken.

Heat oil in 2-quart stockpot over medium-high. Add chicken and cook about 5 minutes or until browned on all sides. Add garlic and cook about 1 minute or until fragrant. Add chicken broth and soy sauce; cover and bring to a boil. Uncover, reduce heat to simmer and cook 3 minutes. Add pasta; simmer 1 minute or until tender. Add spinach; stir just until wilted.

Ladle individual servings into deep bowls and top with thinly sliced green onions.

Swiss Vegetable Medley

16 ounces frozen mixed vegetables, thawed and drained (Cauliflower, Broccoli, Carrot)
1 can cream of mushroom soup
1 (4 ounce) cup shredded swiss cheese
1/3 cup sour cream
1/4 teaspoon black pepper
1 (4 ounce) jar chopped pimientos, , drained (optional)
1 (2 7/8 ounce) can French-fried onions

Combine vegetables, soup, 1/2 the cheese, sour cream, pepper, pimento and 1/2 the onion. Pour into 1-Quart Casserole Dish. Bake covered@ 350 degrees F for 30 minutes. Top with remaining cheese and onions. Bake uncovered 5 minutes longer.

You could make a soup.

1 pound ground beef
4 cups chicken broth
4 cups water
2 (1 ounce) packages dry onion soup mix
1 (15 ounce) can tomato sauce
2 stalks celery, chopped
1 onion, chopped
mixed vegetables
3/4 cup pasta

In a saute pan, brown ground beef, over medium heat.
In a large stock pot, combine broth, water, onion soup mix, tomato sauce, celery, onion, vegetables and bring to a boil and then simmer until vegetables almost done. Add pasta and cook till done.
Add browned ground beef, mix and serve.

CALIFORNIA PIE 1 pie shell 1 pkg. frozen broccoli, cauliflower and carrots combination 1 sm. zucchini 1/4 c. each onion, bell pepper, celery and mushrooms (optional) 1/2 tsp. pepper 3/4 lb. sliced turkey 1/2 stick butter 1/4 c. water 1/2 tsp. salt 1 c. Mozzarella cheese 1 1/2 c. shredded cheddar cheese Saute all vegetables in 1/2 stick butter and 1/4 cup water. Line bottom of slightly baked pie shell with turkey slices and add vegetables. Sprinkle with Mozzarella cheese, then top with cheddar cheese. Bake 20-25 minutes at 350 degrees. Serves 6.

Wrap all of that up in foil, add a bit of butter and all of your favorite spices. It can be wrapped tight and cooked as is Bake at 350. Or I add a piece of fish and cook it all together for about an hour.

But if you do not have fish, Bake that as is in the foil. Brown your ground beef and drain. Serve the veggies and beef over the pasta with a bottle of chilled chardonay.

Delicious, cheap, quick and easy. Can't beat it.

Use the broccoli, cauliflower, and carrots as a steamed (or cheese covered) side dish and use the rest with kidney beans and ground beef for a delicious chili
