I had a recepie that called for condensed milk and all I saw at the store was sweetened so I got that and the food turned out to be way too sweet. So I had to throw it all away. And is evaporated milk the same as condensed milk?

Yes to the first question. Both are condensed, but "sweetened" condensed milk has extra sugar in it, while plain condensed milk does not.

So if you're baking and your recipe calls for condensed milk, and you use the sweetened variety you need to reduce the amount of sugar in your recipe. Vice versa if your recipe calls for sweetened condensed milk and you only have plain condensed milk, then just add a little extra sugar.

As for the second question, evaporated milk is not the same as condensed milk. They both have reduced water content, but condensed milk (even the non-sweetened kind) has added sugar, while evaporated milk does not. [the sugar helps to prevent bacterial growth]

SO on a sweetness level, the sweetwest of the the three is sweetened condensed millk, then condensed milk is semi-sweet, and evaporated milk is not sweet at all.

Condensed milk is cow's milk from which water has been removed and to which sugar has been added, yielding a very thick, sweet product that can last for years without refrigeration. Also known as sweetened condensed milk, the two terms have become synonymous; though there have been unsweetened condensed milk products, today these are uncommon. Unsweetened condensed milk and evaporated milk are the same thing.

The difference between condensed and evaporated comes in to play when you have sweetened condensed milk, which cannot be substituted for evaporated milk. Sweetened condensed milk contains a very large amount of sugar. At least 40% of a can of sweetened condensed milk is sugar, it is therefore very sweet.

If you use sweetened condensed milk instead of condensed milk, cute down on the sugar. I usually cut down on about 3/4 a cup of sugar for every can of sweetened condensed milk. But, I do not like my food too sweet.

But, I thought that evaporated milk was always the unsweetened one, while condensed milk is sweetened.

'Cause I know that they have water "taken out of" the milk, so the milk will be thicker.

Correct me if I am wrong?

Condensed milk is pure milk
Sweetened condensed milk is milk and sugar

the recipes are not interchangeable.

Condensed milk and evaporated milk are one and the same but sweetened condensed milk has sugar added to it.

Evaporated milk and condensed milk are the same. The sweetened condensed milk has sugar in it. I had the same problem once.

sweetened condense milk is thick and gooey
