Butternut Squash Stuffed with Apples, Raisins and Almonds

1 Butternut Squash
1 Apple
1/2 cup Raisins
1/2 cup Walnuts, pieces
2 tsp. Cinnamon, ground

Cut butternut squash in half lengthwise. Scoop out the seeds, and set the squash aside in a covered glass baking dish. (Squash seeds may be saved for toasting.)

Cut apple into eight wedges. Cut wedges across into small pieces and place in a small mixing bowl. Add the raisins and walnut pieces. Sprinkle with a little cinnamon and mix well.

Stuff the cavity in each butternut squash half and sprinkle some additional cinnamon on the surface of the squash and stuffing. Cover the baking dish and bake in a microwave oven on "high" or in a conventional oven at 350 F until the squash is tender.
----------

ROASTED BUTTERNUT SQUASH

1 butternut squash, about 1 ½ to 2 pounds
olive oil cooking spray
1/8 teaspoon allspice
1/8 teaspoon salt
¼ teaspoon pepper

Preheat oven to 350°. Cut the squash into four wedges. Remove the seeds. Mist each wedge with cooking spray and dust with allspice, salt and pepper. Bake for 40 minutes until soft.

Slice lengthwise. Using a spoon, carve out the fibrous centre and its seeds. Brush cut side with soft better and place, cut side down, on a foil covered baking tray. Place in a preheated 400 degree f (gas mark 6) and roast for 40 - 45 minutes or until the skin begins to blister and the flesh inside becomes tender.

Remove from oven and allow to cool completely before next step.

When cold, gently remove some of the cooked flesh from the shell. Combine the squash with a breadcrumb based stuffing made of fully cooked, sauteed sausage meat (removed from their casings), shallots, mushrooms, parmasan cheese and whatever else you fancy - moisten with small amounts of chicken stock. I'd suggest lightly seasoned with ground sage.

Spoon the stuffing into the baked squash, drizzle with some melted butter and re bake for 20-25 minutes in a medium heat oven (350 F or gas mark 4).

Cheers

I love squash! The quick and easy is cut lengthwise, take the guts out. Place in a micro safe dish with 1/4" of water. Micro til tender (about 10 min). It should feel like a backed potato. Spoon or cut off shell and serve with butter salt and pepper.

Another way is to cut into thin slices or rings, dredge in seasoned flour (whatever dry seasonings you like) the flour usually sticks well because the squash is moist, but if it doesn't stick dredge in egg then flour. Do a quick fry in oil, drain on a paper towel. Serve with tamari (soy sauce).

I've got a million squash recipes because it is so good.

I personally think any vegtable has great flavor on there own and if you mix them up you get even better flavours. So if i ever cook vegetables i tend to just put salt and pepper on them with a bit of olive oil.
But stuffing my fav receipe is
Marrow or in youre case Butternutt Squash
stuffed with brown rice and veg
Now the veg can be anything YOU like
I have mixed peppers beansprouts water chestnuts onions red cabbage mixed with the brown rice and i put a vegtable oxo in it then stuff the vegetable

Best of luck

Cut in half, lengthways, scoop out seeds and bake in the oven around a roast meat dish. When cooked you can fill the centre with whatever veg you prefer. I like peas, chopped tomatoes, a little chopped onion and covered in a white sauce. Add flavourings to taste.
