Zucchini Chocolate Orange Cake
"Very moist and different."
Original recipe yield: 1 Bundt pan.
INGREDIENTS :
2 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon round cinnamon
3/4 cup butter
2 cups white sugar
3 eggs, beaten
2 teaspoons vanilla extract
1/2 cup orange juice ( or milk )
3 cups grated zucchini
1 tablespoon orange zest
1 cup chopped walnuts
1 1/4 cups confectioners' sugar
1/4 cup orange juice
1 teaspoon vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour Bundt pan.
In a medium bowl, sift flour, cocoa, baking powder, baking soda, salt and cinnamon. Set aside.
In a large bowl, cream butter and sugar until fluffy. Add eggs, 1 teaspoon vanilla and orange juice to the butter mixture. Stir in dry ingredients and mix until well blended. Fold in zucchini, orange zest and nuts.
Pour into a greased and floured Bundt cake pan. Bake at 350 degrees F (175 degrees C) for 50 minutes, or until a toothpick inserted into center of cake comes out clean. Allow to cool, then drizzle with glaze.
To make the glaze: In a small bowl mix together sugar, orange juice and vanilla. Invert cake onto serving dish, then pour glaze over.

Using solid shortening, grease an 8" cake pan and dust with cocoa; set aside. In microwave (or kitchen range), melt chocolate and butter in bowl on medium power, stirring once, until melted. Add sugar, 1/2 cup cocoa, eggs, and vanilla and mix well. Pour into prepared pan. Bake at 300 degrees F for 30 minutes. Cool for 5 minutes, then turn out onto a wire rack and cool completely. Serve with melted vanilla or chocolate ice cream, if desired, for a sauce. Serves 8 It's easy and fast! Enjoy! =)

A variety of tips for great cakes
Temperature & Cookware
# If your oven temperature is questionable, invest in an oven thermometer. Some ovens can be off by as much as 75°.
# Before mixing the batter, prepare the pans, turn the oven on, and make sure the rack is in the center.
# Shiny pans reflect the heat, and are your best choice for cake baking.
# Reduce the oven temperature by 25° when using glass pans.
# Substitute 8-inch square pans for round if you want, or use 2 to 3 8 X 4-inch loaf pans. The baking time will be less, so begin checking about 15 minutes before the time suggested.
# Have all ingredients at room temperature for best results.
# Grease pans with about 1 tablespoon of fat per layer pan.
# Use cocoa (or carob powder) instead of flour for dusting a greased pan when making a chocolate cake.
Ingredients & Techniques
# When measuring flour, fluff it in the bag then spoon into the measuring cup; level off with a knife.
# To "lighten" a hard wheat flour, spoon 2 to 4 tablespoons of cornstarch into a 1-cup dry measure, then sprinkle the flour in until full and scrape off the excess with the back side of a knife.
# For better texture, try substituting buttermilk for regular milk in your cake recipe. For each cup of buttermilk used, add 1/2 teaspoon of baking soda to the dry ingredients.
# Beat butter and sugar for as long as the recipe directs.
# To make a lighter cake, separate the eggs first. Add the yolks to the butter mixture, beat the egg whites then fold into the batter.
# In general, use 1 1/2 teaspoons baking powder for every cup of flour in cake batters.
# To speed up the softening of cold butter, grate or thinly slice it and let stand for about 10 minutes over a bowl of warm water.
# Toss nuts, raisins and chopped fruits in flour first. This will help keep them suspended in batters.
# To split layer cakes loop a long strand of unflavored dental floss around the center of the cake horizontally. Cross the ends and slowly and firmly pull on each end to cut cleanly through the cake.
# Cool the cake thoroughly before frosting.
# To moisten confectioners' sugar frostings, use other liquids in place of milk. Melted jelly, fruit juices, coffee, peanut butter (with a little milk), honey, or maple syrup are just a few alternatives.
# Make chocolate whipped cream by combining 2 tablespoons each unsweetened cocoa powder and confectioners' sugar in a mixing bowl. Gradually stir in 1 cup whipping cream, then refrigerate for at least 30 minutes before beating.

EGGLESS MAWA CAKE
Ingredients
Quantity Refined flour (maida) 1½ cups
Mawa (crumbled) 1½ tbsps
Butter (softened) ¾ cup
Powdered sugar ¾ cup
Milk powder 5 tbsps
Cornstarch 2 tbsps
Baking powder 1 tsp
Baking soda 1 tsp
Green cardamom powder ¼ tsp
Buttermilk ¼ cup
Milk 2 tbsps
Method of preparation
1. Pre-heat oven to 180? C. Grease moulds or paper cups.
2. Take butter and powdered sugar in a bowl and cream together with a wooden spoon till light.
3. Sieve milk powder into the bowl and continue to mix. Add mawa and mix again.
4. Sieve refined flour, corn starch, baking powder, baking soda and green cardamom powder into the bowl and mix.
5. Add butter milk to correct the consistency. If the batter is still thick add a little milk and mix.
6. Pour into the greased moulds or paper cups. Tap the moulds lightly to even the batter.
7. Place them in the preheated oven and bake at 170? C for thirty minutes.
8. Remove from the oven and let them cool before demoulding.
9. Serve
ZESTY LEMON CAKE
Ingredients
Lemon rind, grated 1
Lemon juice 3 tablespoons
Refined flour (maida) 1¾ cups
Baking soda 1 teaspoon
Baking powder 2 teaspoons
Butter ½ cup + for greasing
Powdered sugar ½ cup
Yogurt 1¼ cups
For topping
Sugar 3 tablespoons
Lemon juice 3 tablespoons
Method
1. Sieve refined flour, baking soda, baking powder into a bowl.
2. In a separate bowl cream together butter and powdered sugar. Add yogurt and mix.
3. Grate lemon rind into the butter mixture and mix.
4. Add lemon juice and mix. Add flour, a little at a time and mix.
5. Heat a pressure cooker with some water and place a base in it.
6. Grease a cake tin lightly with butter. Transfer the cake batter into the greased tin.
7. Place it in the pressure cooker.
8. Cook for thirty to thirty five minutes without cooker’s gasket and weight. Remove when done.
9. For topping, take sugar and three tablespoons of water in a pan and heat till sugar dissolves. Add lemon juice and mix.
10.Apply on the top of cake
11.Chill the cake and serve

with cake mix it is very easy u have 2 add 3 eggs n oil or butter in that ammount noted on the box u can get so many flavers in cake mix ....add all this n mix well then greese ur cake pan wd butter and keep it in oven 4 ....25..30 min 350degree on bake...ur cake is ready ....in 30 min :))

if you're making it from scratch, measure the ingredients exactly. make sure your oven is heating to the correct temperature. bake for the allotted time. cool before removed the cake from the pan.
