I'd go with the evaporated milk. I us evaporated milk in my home made chowder and it gives a very unique taste (flavor) and I always have people asking me when I'm going to make my chopwder again. Good Luck.

Ok this is the deal...In my cake (and it works perfectly everytime) I use 1/2 cup milk and 1/2 cup water combined to replace 1 cup half anf half./ Its the same thing. I checked it out on the internet.
EDIT: Half and half gives a very good result in cakes. Milk will not do the same so use the recipie I just gave to make half and half. Dont just pour 1 full cup of milk or evaporated milk that equals 1 cup milk when u add water. Dilute it doubly if u want to use it instead of half and half. U can use 1/2 % milk 1 cup directly. It will do.

1/2 1/2 is half milk half cream so that's what you should use. Evaporated milk might be ok, depends on what you are using it for, however it is not the same as 1/2 1/2

I would use straight evaporated milk for the whole milk. For the half and half, I would use evaporated milk and water diluted like so: 1 cup evaporated milk and 1/2 cup water.

I normally use milk as a substitute for 1/2 and 1/2, but it is usually whole milk. I would say that you could use 2% mil in place of half and half, however half and half would be for the best result.

I'd use the 1/2% milk in place of the 1/3 cup whole milk but that is all the substituing I'd do in that sense.

I have used evaporated mlk in place of half and half before with no problems. H & H is thicker than regular milk, so regular milk won't work.
Half-and-Half Half-and-half is made by homogenizing a mixture of milk and cream. It must contain at least 10.5 percent milkfat, but not more than 18 percent.
Tip on Half-and-Half: Half-and-half can be mixed at home using equal parts homogenized whole milk and light cream.
Evaporated Milk Evaporated milk is prepared by heating homogenized whole milk under a vacuum to remove half its water, sealing it in cans, and thermally processing it. When evaporated milk is mixed with an equal amount of water, its nutritive value is about the same as whole milk. Evaporated skim milk is also available.
Tips on Evaporated Milk: Always refrigerate after opening. Used full strength, evaporated milk adds extra nutritive value to the diet. Evaporated milk, with an equal amount of water added, may replace fresh milk in recipes. It can also be used in coffee or on hot or cold cereal.

I suppose you could use the 1/2% milk, but it's going to be a bit watery. If you had just whole milk, you could probably do without the half and half, but it might be missing a bit of the taste from the cream.

I would stick with regular milk, half and half and regular milk or not the same but very similiar, I dont think that it is going to affect what you are making! I have never used evaporated milk so i dont know about that.
