Do you mean heat from cooking? or from the sun?

Most vegetables that we cook retain virtually all their color, but some will bleach out. Fruits, too ... a cooked tomato stays red.

Heat from the sun can cause bleaching, too.

it doesnt make them as rich in flavor or color, look at grass when its hot and really sunny the grass starts to turn brown and gets crunchy so fruits and veggies can do the same, change colors and taste completely different

are you asking if the color changes in different growing zones?or if heat changes the color after they are picked?
