And in the soup I am using small red potatoes. It says to boil them, but for how long? They are going to be cooking for about 30 minutes with everything else. And I want them to be fully cooked, but not over cooked, and i would still like a few chunks of potato in the soup. So how long should I boil them?

Simmer covered 10-15 min then add the rest of the ingredients

I used to be an assistant chef in New Orleans and I can say I've worked a lot with small red potatoes.
Mostly it depends on how large you slice or cube them (please don't boil the entire potato - you'll wait 45 minutes just for them to get soft).
Small chunks 15 minutes on a full boil, larger chunks 20 minutes on full boil. Season them with salt and pepper (or whatever you'd like) right after they are done boiling - that's when they absorb external flavors. Let them cool for about 5-10 minutes so they can absorb the flavors.
Then put them in the soup near the end. That will ensure the 'little chunks' you want are still there and don't dissolve into the soup.

This recipe says 10 minutes, but the potatoes are cubed:

Dice unpeeled red potatoes into 1/2−inch cubes. Place in a large Dutch oven, cover with water and bring to a boil. Let boil for 10 minutes.

What I'd do in that case is to use two pots. Make the cheddar sauce in one, and boil the potatoes in another. Time it so the cheddar part is done first, keep that warm until the potatoes are as fork-tender as you'd like and then add them.

Just my thought.

10-15 minutes is right then if you want chunky style soup use a "masher" the tool with the 1/4 in squares not a hand blender or ricer. Good Luck!

start them in cold lightly salted water, when they start to boil turn down the heat to a simmer allow them to cook undisturbed for 10 min. ,if you boil them they will be mush.they will finish cooking with your other ing. for 30 min .
