Gingerbread is really easy to make! you need 125g butter, 60g soft dark brown sugar, 115g golden syrup, 1 egg, 40g self raising flour, 1 tblsp ground ginger, 1 tsp bicarb soda.
Preheat the oven to 180 C (Gas 4), Grease/line 2 or 3 baking trays. Whack the butter, sugar and syrup until light and creamy. Add the egg gradually, beating well after each addition.
Sift flours, ginger and bicarb onto butter mix and use a knife to mix until just combined. Then with a floury hand combine dough thouroughly, then turn onto a floured surface and knead for a couple of minutes. Roll out dough onto a chopping board til it's about 1/2cm thick and then put it in fridge for about 1/4 hour. Cut out dough shapes/people, put on trays and bake for 10 mins or til lightly browned.

Ingredients
1 c Brown sugar
1 c Sour milk
3 c Flour
3/4 c Molasses
3/4 c Melted shortening
2 Eggs, well beaten
1 ts Baking soda
1 ts Ginger
1 ts Cinnamon
1/4 ts Salt
Instructions
Combine eggs, sugar, shortening, and molasses. Sift flour, measure, and sift with baking soda, salt, and spices. Add alternately with milk to first mixture. Beat until well blended. If desired 1 cup chopped raisins may be added to batter. Pour into well-oiled pan. Bake in moderate oven (375° F) about 40-45 minutes. The loaf may be sliced in 2 layers, and marshmallows placed close together between the layers. Cut in squares and garnish with whipped cream.

Makes 3 to 4 dozen 2 1/2- to 3-inch cookies
Ingredients:
1/2 cup (1 stick, 4 ounces) butter
1/2 cup (3 1/4 ounces) vegetable shortening
3/4 cup (6 ounces) light brown sugar, packed
1/2 cup (3 1/2 ounces) granulated sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ginger
1/2 teaspoon allspice or cloves
3/4 teaspoon salt
1 large egg
2 tablespoons (1 1/2 ounces) molasses
3 cups (12 3/4 ounces) unbleached all-purpose flour
3 tablespoons (3/4 ounce) cornstarch
Preparation:
Preheat oven to 350°F.
In a medium-sized bowl, beat together the butter, shortening, sugars, baking powder, spices and salt until light and fluffy. Add the egg and molasses and beat well. Mix about half of the flour into the butter mixture. When well combined, add the cornstarch and the remaining flour.
Divide the dough in half, flattening each half slightly, and wrap well. Refrigerate for 1 hour (or longer), for easiest rolling. Shape cookies as directed in the Decorator’s Dream recipe, and bake for 10 to 12 minutes in a preheated 350°F oven.
Baking time: 10 to 12 minutes.

INGREDIENTS
3 cups biscuit baking mix
1/3 cup white sugar
1 teaspoon pumpkin pie spice
3/4 teaspoon ground ginger
1/2 cup molasses
1/2 cup applesauce
1 egg, beaten
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C).Grease a cookie sheet.
In a medium bowl, stir together the baking mix, white sugar, pumpkin pie spice and ginger. Mix in the molasses, applesauce and egg until the mixture forms a ball. Turn out onto a lightly floured surface and knead for 10 turns. Place onto the prepared cookie sheet and pat into a 10 inch circle.
Bake for 15 minutes in the preheated oven. Cut into wedges while still warm and serve with vanilla ice cream.
