SPINACH DIP 10 oz. frozen choped spinach (thawed and drained) 8 oz cream cheese (room temp) 8 oz sour cream 8 oz can of water chestnuts, drained and coarsely chopped 1/3 c. chopped red bell pepper 1 1-oz pkg Ranch Dip mix Drain or squeeze as much liquid off the spinach as possible. Place spinach on cutting board and run your chopping knife through it a few times. Chop water chestnuts and bell pepper and set aside. Hand stir the cream cheese, sour cream and dip mix until well blended. Stir in vegetables and enjoy with your favorite cracker or raw vegetables. Sometimes I just really don't want sour cream, so I get 16 oz of cream cheese for the dip and omit the sour cream. Easy to make. This is a great recipe. People ask me for the recipe a lot, and I'll bet they will ask you too.

Take frozen spinach 2 to 3 boxes, thaw, and drain. Squeeze the water out. Use one 1 pound tub of sour cream for each of the boxed spinach. Place all of that in A large bowl. Now here is the good part put fresh crumbled blue cheese in ingredients. Use to your own discretion. I love lots of it. Place in your serving container neatly. Garnish the middle of dip with fresh leaf spinach, and enjoy. A great bread bowl is A great way also is A good place to serve dip from.

This is REALLY good!
Baked Artichoke Spinach Dip
Ingredients:
1/2 cup mayonnaise or salad dressing
1/2 cup sour cream
1/2 cup grated parmesan cheese
3/4 cup shredded mozzarella cheese, divided
1 to 2 teaspoons Dijon mustard
dash white pepper
1 can (14 ounces) artichoke hearts, drained and coarsely chopped
1 cup coarsely chopped spinach leaves
1/2 cup finely chopped red onion
Preparation:
In a large bowl, combine mayonnaise, sour cream, parmesan, 1/2 cup of mozzarella, mustard and pepper. Stir in artichoke hearts, spinach and onion. Transfer mixture to a 1-quart casserole dish and cover, chill for at least 3 hours.
Bake at 350 degrees for 30 to 40 minutes or until thoroughly heated. Top with the remaining 1/4 cup of mozzarella. Bake 5 minutes longer or until cheese melts. Serve with bread or crackers. I scoop mine in a hollowed out sour dough loaf round and use the bread pieces for the dipping

This is our favorite, it's simple but good.
1 sourdough loaf, hollowed out
16 oz. sour cream
1 pkg. Hidden Valley Ranch powder
1 box (~10 oz.) frozen chopped spinach, thawed and squeezed well
1 can water chestnuts, chopped
Combine the sour cream and ranch powder. Add the spinach which should be very well drained and squeezed. Add the chestnuts. Refrigerate until needed and then put it in the bread bowl.
Great with bread cubes, veggies and chips!
