Roast it as you do potato.... it has such a great natural sweetness you don't need to add anything. They are so yummy when they are crispy and caramelised in the meat juice!

Sweet Potatoe Casserole

3 pounds of sweet potatoes peeled and cooked.
3 eggs
1/2 cup milk
1 stick of margarine
1/2 tsp vanilla

Topping:
1 cup of light brown sugar
1/3 cup of flour
1/3 cup melted butter
1 cup of chopped pecans

boil or bake pototes, Peel potatoes after baking if you bake them! I find that they are a brighter color if you bake them. Whip with milk, add eggs, sugar, margarine and vanilla. Mix. Pour into a buttered casserole.

Mix together topping ingredients. Spoon on top of potatoes.

Bake 35 minutes or until center is set at 350 degrees.


Do not substitute margarine for butter for the topping.

MASHED MAPLE SWEET POTATOES
3 lb red garnet or dark-orange sweet potatoes
2 tablespoons maple-flavored syrup
1/4 cup butter, softened
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
2 tablespoons chopped pecans, toasted, if desired

1. Heat oven to 350F. Pierce potatoes with fork. Place potatoes in 9-inch square pan. Coer; bake about 1 hour 25 minutes or until potatoes are tender when pierced witha fork.

2. Let potatoes stand about 10 minutes or until cool enough to handle; slip off skins and discard.

3. In 2-quart saucepan, heat maple syrup and butter to boiling. Reduce heat to low. Add potatoes to saucepan; mash potatoes with syrup mixture, using electric mixer on medium speed, until light and fluffy. Stir in salt and nutmeg. Sprinkle with pecans. 6 servings (1/2 cup each)

Roasting them is really nice. Maybe drizzle a little honey on them and your ordinary potatoes. You could also mash them - boil them the same as you would ordinary potatoes and mash with a little milk and butter or you could try mashing them with philidelphia.

I would roast it as you would roast regular potatoes but add a little salt and olive oil.

Roasting with normal potatoes are tasty but make sure to cut them small.

Wash then and cut them into even size pieces, but leave the skin on. Roast in the oven in a little Olive oil (I use garlic Olive oil) and a little salt. DELICIOUS!

I like sweet potatoes mashed. Just boil them and then mash them add some brown sugar and butter and they are great. My mom always adds some marshmallows too, but you don't have to do that they are good just mashed.

Have you ever heard of stuffed apples?? Core apples, cut them in half, sprinkle with brown sugar & cinnamon, bake until tender. Mash sweet potatoes, add sugar, soft butter, pecans and cinnamon to tase and put in apples bake until hot......they are very good.

treat it exactly the same way you do for normal potatoes. but if you roast, dont parboil first, they will cook quicker than normal potatoes..
