4 egg whites
1/4 teaspoon salt
1/2 teaspoon cream of tartar
1/4 teaspoon vanilla
1/4 cup confectioners sugar
6 individual shortcake shells (from the bakery)
1 pint ice cream, well frozen
24 hours before preparation place ice cream in the coldest section of your freezer or deep freeze. Ice cream needs to be well frozen to make this dish.
Preheat oven to 450°F.
Beat egg whites until foamy; add salt, cream of tartar and vanilla, gradually beating in sugar until stiff, shiny peaks form.
Fill centers of shortcake shells with ice cream. Cover each with a layer of meringue, using a spatula.
Bake three minutes at 450°F in a preheated oven.
Note: You can substitute pound cake or angel food slices for the shortcake shells.

Mini Baked Alaska Recipe courtesy Gale Gand

Episode: Anniversary Celebration
1 store-bought sponge cake or pound cake
1 pint ice cream, your favorite flavor
1/2 cup egg whites (from about 4 eggs)*
1/2 cup sugar
4 clean empty egg shell halves
2 tablespoons orange-flavored liqueur (recommended: Grand Marnier)
Equipment:
Icing spatula
Ice cream scoop
Pastry bag with a medium star tip
A kitchen torch
Clear some room in the freezer to fit 4 dessert plates. Cut the cake into 1/2-inch thick slices. Cut out four 3-inch disks and place them on the 4 dessert plates. Place 1 scoop of ice cream in the center of each cake disk and place them in the freezer. One at a time, remove the ice cream from the freezer and encase the ice cream in slices of cake. The cake covering the ice cream should fit together nicely, creating a dome. Place them back in the freezer for up to 2 days. To make the meringue, whip the egg whites until foamy, then add the sugar, and continue whipping until stiff and glossy. Spread it over the cake domes with an icing spatula, leaving a relatively smooth surface. Push an eggshell halfway into the top to act as a bowl, which will be filled with liqueur before serving. Do all 4 domes, returning them to the freezer as you finish them. Transfer the remaining meringue to your pastry bag. Pipe meringue decoratively on the domes. Heat the broiler to very hot (or fire up your kitchen torch) and broil until lightly browned all over. Return to the freezer for up to 2 days, until ready to serve.
When ready to serve, warm a little orange liqueur in the microwave and carefully pour it into the empty eggshells. Ignite the liquor and carry it to the table. After the flame dies down, lift the eggshell off the Alaska with 2 spoons and pour the liqueur over the dessert.

INGREDIENTS
2 quarts vanilla ice cream, softened
1 (18.25 ounce) package white cake mix
1 egg
1/2 teaspoon almond extract
8 egg whites
1/8 teaspoon cream of tartar
1/8 teaspoon salt
1 cup white sugar
DIRECTIONS
Line the bottom and sides of an 8-inch round mixing bowl or deep 8-inch square container with foil. Spread ice cream in container, packing firmly. Cover and freeze 8 hours or until firm.
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan.
Prepare cake mix with egg and almond extract. Pour into prepared pan.
Bake in preheated oven according to package instructions, until center of cake springs back when lightly touched.
Beat egg whites with cream of tartar, salt and sugar until stiff peaks form.
Line a baking sheet with parchment or heavy brown paper. Place cake in center. Turn molded ice cream out onto cake. Quickly and prettily spread meringue over cake and ice cream, all the way to paper to seal. Return to freezer 2 hours.
Preheat oven to 425 degrees F (220 degrees C).
Bake the Alaska on the lowest shelf, 8 to 10 minutes, or until meringue is lightly browned. Serve at once.

BROWNIE BAKED ALASKA
1 1/2 pt. chocolate ice cream,
slightly softened
1 pt. vanilla ice cream,
slightly softened
1 (21 or 24 oz.) can cherry
pie filling
1 (15 or 15 1/2 oz.) pkg.
fudge brownie mix
4 egg whites (room
temperature)
1/4 tsp. salt
1/8 tsp. cream of tartar
2/3 c. sugar
Up to 2 weeks ahead, line chilled 1 1/2 quart mixing
bowl with plastic wrap. With back of large spoon, spread
chocolate ice cream to line bowl, being sure ice cream comes to the top of the bowl. Freeze 30 minutes. In medium bowl stir vanilla ice cream with cherry pie filling. Remove bowl with chocolate ice cream from freezer; spoon vanilla ice cream mixture in center; cover and freeze until firm, about 5 hours.
Meanwhile, prepare brownie mix as label directs for cake
like brownies, but use 9-inch round cake pan and bake 30
minutes; cool. Place brownies on sheet of foil; invert frozen
ice cream on top; peel off plastic wrap. Wrap brownie ice
cream cake with foil and freeze.
About 20 minutes before serving, preheat oven to 500 degrees.
Prepare meringue. In small bowl with mixer at high speed, beat egg whites, salt and cream of tartar until soft peaks form.
Gradually beat in sugar until completely dissolved. Whites
should stand in stiff, glossy peaks. Unwrap ice cream cake;
place on cookie sheet. Spread meringue over ice cream cake,
sealing to edge, down to cookie sheet. Bake 4 to 5 minutes,
until meringue is lightly browned. Serve immediately. Makes 16 servings.

get spunge cake make a layer of spounge at the bottom of a dish. get a block of icecream place it in the centre and pour whisked egg white over (add brown sugar too the egg white) add some fruit and put in the oven for about 5 mins (until golden brown)
