I have two recipes actually... one is for sugar cookies..one for gingerbread...I use both and they are quite successful.

Sugar Cookies - 350 degrees

2 cups margarine
2 cups sugar
4 eggs
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp.salt
5 cups flour

Mix in order given. (adding flour gradually) Roll out half of dough on floured surface then cut into shapes with cookie cutters. You can even freeze cookie dough if you wish to only use half. Bake till a golden brown.

Gingerbread Cutouts - 350 degree

1 cup margarine
1 cup sugar
1 egg
1 cup molasses
2 tbsp. vinegar
1 tsp. cloves
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. ginger
1 tsp. cinnamon
5 cups flour

Mix in order given. I usually add flour gradually. Once all done then chill. Roll out on a floured surface and cut into shapes. Place on lightly greased cookie sheet. Bake 5-15 mins depending on thickness of cookie

This is a good icing for cut out cookies and can be used for either.

Icing for cookies:

3 egg whites
1/4 tsp. cream of tartar
3 3/4 cup icing sugar

Whip till smooth .You can color it as you wish. Keep a moist cloth over bowl as it does dry out fast.

Good Old Roll-Out Sugar Cookies
1/4 cup vegan butter
1/3 cup sugar
1/2 teaspoon vanilla
1 egg
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/2 teaspoon baking powder
1 cup flour

Cream butter and sugar. Add vanilla.
Mix in egg, salt, cinnamon, and baking powder.
Add flour and mix until a dough-like form is reached.
Refriderate for 30 minutes before rolling out.
On a lightly floured surface, roll out dough to a 1/4 inches thickness and cut out with desired cutters.
Bake at 350 degrees.
For soft cookie: 10 minutes, at first they will appear unfinished, but they will harden as they cool.
For hard/crispy cookie: 14 minutes, they will become nice and crunchy once they cool.
Frost with 1 1/4 cup powdered sugar and 2 Tbs water.
Eat and enjoy.
