I would use erfahren (from erfahrung = experience), a better choice, caicos turkey is correct.
p.s. Georgeena's example is even better, erleben is just right.

A German would say:
Ich moechte mich mit der deutschen Kultur vertraut machen ?
It has the same meaning as in English. If you translate this sentence word by word it sounds very artificial and a German would not get the meaning of it.
The word "empfinden" is more: experiencing pain or experiencing a feeling as e.g. happiness, it is more the English meaning of "feeling". something very specific, concrete. Culture is something very broad: music, language, behavior and and and .... it is not a single feeling, it is broader, it will be a lot of single experiences if you get in contact with the culture. This is expressed in the German sentence.

i d use the verb "erleben", "mitmachen", somthin like that. Empfinden means feel, its just not right. Even if u wanted to say "i want to feel the german culture" i would recommend fuehlen" oder "spueren" not "empfinden".
So i d say: " Ich moechte die deutsche Kultur erleben". doesnt sound that great in german anyway but it makes sense. Maybe a native speaker will come up with a better idea.

Ich moechte die deutsche Kultur (or better die Kultur in Deutschland) erfahren oder in die deutsche Kultur eintauchen (more imaginative) ... empfinden is the wrong word, because it has more to do with feelings and is not as real (if you can say that) as erfahren, which is the exact translation.

I would use "erfahren". It has the sense of personal involvement in a learning process, which is really what you are saying.
