I am looking for a dumpling recipe that my mom used to make using eggs, baking powder, flour, salt, and milk. I don't know the measurments but they were not like a biscut dumpling, they were hard dumplings. Hope someone can help.

1 cup flour
2 tsp double acting baking powder
1/2 tsp salt
mix and sift in bowl

beat 1 egg in a measuring cup
add milk 'til the cup is 1/2 full
beat well then slow add to dry ingredients
you may add more milk but keep the batter as stiff as possible.
add to boiling soup, as soon as dumplings rise to top cover and reduce heat to a simmer for 10-15 minutes. Good luck

potato dumpling

INGREDIENTS
6 cups baked potatoes -- peeled, cooled and riced
6 eggs
1 teaspoon salt
2 cups all-purpose flour
3 slices square sandwich bread
2 tablespoons butter
DIRECTIONS
The day before, boil potatoes with the skins on until tender. Cook enough to make at least 6 cups cold riced potatoes. Peel the potatoes, and rice them. Refrigerate them until needed.
Brown 2 to 3 pieces of bread in butter or margarine for croutons. Cut into small pieces, and let cool.
Combine riced potatoes, 5 or 6 beaten eggs, salt, and flour. Add croutons, and mix together. The mixture should stick together. Too much flour will make them heavy.
Form into balls about the size of tennis balls. Drop into boiling water in a large pot. Cover and cook for 10 minutes. Serve immediately.

My Grandma's recipe was --- 2 cups warm chicken broth , 1 tablespoon Accent , 1 teaspoon salt , 5 cups flour - Combine and roll out to 1/8 inch thickness. Cut into small, short strips. Drop into boiling broth and let come back to a boil. Turn heat low and simmer 15 minutes with lid on. Add cooked chicken and serve.
