Corn Bread

INGREDIENTS
1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
1 cup milk
2 eggs
1/4 cup shortening
DIRECTIONS
In a mixing bowl, combine flour, cornmeal, sugar, baking powder and salt. Add the milk, eggs and shortening; beat for 1 minute. Pour into a greased 9-in. square baking pan. Bake at 425 degrees F for 20-25 minutes or until bread is golden brown and tests done.

roll ups are always a great hit.
1 8 oz. pkg cream cheese
1 pkg ranch dressing mix
deli ham
flour tortillas

Cream together the ranch mix and the cream cheese. Spread onto flour tortilla, place a slice of ham in center and roll up. Cut into pieces and chill. (Overnight is best to let the flavors mix.)
Can be served with ranch dressing.

Also you can substitute salsa for the ranch dip mix and not put the ham in to make salsa roll ups. Then serve with salsa.
These are really yummy.

It sounds like you are having a cocktail party, so you'll want to have a lot of variety and a lot of little snacks around that can be consumed in one bite.

For my cocktail parties, I usually put out a spread of cheese and crackers, stuffed mushrooms, an antipasto platter with rolled cold cuts, olives, and specialty cheeses, homemade guacamole, dip (in summer I put a spinach dip in a hollowed out pumpernickel and in winter I put out a hot spinach-artichoke dip), and shrimp cocktail.

I also buy some frozen appetizers - depending upon mood, I'll either get scallops wrapped in bacon, crab cakes, mozzarella sticks, mini quiches, or the box of assorted frozen goodies.

Here's your best answer... find foods that can either be served cold or room temperature, like shrimp cocktail or rare roast beef with goat cheese and roasted red peppers. Also make foods that can be made a week in advance and frozen. Then just pop the hors doeurves in the oven and reheat. You can find many recipes on epicurious.com or food network.com. I will guarantee that this will make your life infinitely easier during the day and at the party.

Thats what we do every year for our christmas eve dinner. We do fresh veggies and dip, cold veggie pizza, deviled eggs, cheese sausage and cracker trays, and this year I think im gonna make BBQ and hot wings. Plus we have cookies and a chocolate fondue pot (which the kids LOVE)

anything you can skewer on a toothpick. i usually make a big huge bowl of shrip and have cocktail sauces and a plate of little club sandwiches. try slices of deviled eggs (or slices of omlette like egg sushi) on toast topped with cheap caviar.

don't worry too much about finger fooding it -- make some gooey stuff and serve it with little plates and forks.


i usually shy away from meat in sauce -- you don't know where its been! (chicken wings, cocktail franks, meatballs, etc.)

I made some loaded potato skins last year. they went really well. This year I'm doing chicken wings. Swedish meatballs are classic. You could just bring a plate of cookies.

look on Kraftfoods.com, they have some great and easy appetizer recipes, one of them is you use mini muffin tins and put wonton skins in them to make a little cup and then you can fill with a crab dip...looks yum
