the perfect chip to me is to wash spuds but keep skins on and then chip them and chuck them in deep fat fryer ( very healthy lol) not too crispy but with soft in middle about 10 mins on 190 c temp yummmyyy!!!!! then lashings of salt and tommy sauce.

slice pots into approp size chips

parboil i.e. boil for about 6-8 minutes

allow to cool and dry

deep fry for about 3-4 mins on 150ish on the fryer

take out, allow to cool and drain for 3-4 minutes

turn up the heat to about 180

"flash fry" for about 2 mins

always use decent quality oil.

do you know how to blanche ?cook in oil until soft(low temp)

take the chips out and cool,

then maximum heat for the oil crisp them up.

Use Maris Piper or King Edward potatos, if you dust them lightly with flour before frying they will be extra crispy.
Cook them in beef dripping......Fantastic

get some Yukon Gold spuds

cut em into 3/4 inch cubes, don't peel em even

cook em in olive oil in a wok

about 10 minutes

If ya mean corn ships, buy em Bearitos are good

thinnly slice potatos and add paprika and garlic and parsley and fry them in a pan and u got some tasty fries/chips
or just by pringles or baked tostitos or regular ones
