Oodles of Noodles with Cheese Recipe

Because most people go to Seattle's Dahlia Lounge for the innovative northwestern food and the groovy scene, a lot of them miss this excellent take on macaroni and cheese. It's not one of those Cheddar-heavy versions. Instead it has the slight tang of goat cheese, a spicy breadcrumb and bacon topping and a healthy dose of grated Parmesan. --Kate Krader
RECIPE INGREDIENTS
For Breadcrumbs:
4 slices of bacon
3 tablespoons unsalted butter
1 tablespoon olive oil
1 cup coarse dried breadcrumbs
2 tablespoons finely chopped flat-leaf parsley
1 teaspoon finely grated lemon zest
1 teaspoon crushed red pepper
For Sauce:
1 teaspoon minced shallot
1 teaspoon minced garlic
1 1/4 cups heavy cream
1 cup freshly grated Parmesan cheese (about 3 ounces)
1/3 cup soft goat cheese
1 tablespoon minced chives
For Pasta:
1 pound penne pasta
RECIPE METHOD
FOR BREADCRUMBS: Bring a large pot of salted water to a boil. In a small skillet, cook the bacon over moderate heat until crisp, about 8 minutes. Transfer to paper towels to drain, and let cool. Crumble the bacon. In a small saucepan, melt 1 tablespoon of the butter in the olive oil until foamy. In a bowl, toss the bacon with the breadcrumbs, parsley, lemon zest and crushed red pepper. Stir in the olive oil mixture until incorporated.
FOR SAUCE: Melt the remaining 2 tablespoons of butter in a saucepan. Add the shallot and cook over moderate heat until lightly browned, about 3 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the cream and simmer, stirring, until reduced by one-third, about 5 minutes. Remove from the heat and stir in the Parmesan, goat cheese and chives. Season with salt and pepper.
FOR PASTA: Add the penne to the boiling water and cook until al dente. Drain the penne and transfer to a serving bowl. Add the cheese sauce and toss. Sprinkle the breadcrumbs on top and serve.
WINE RECOMMENDATION: The red pepper can be balanced by acidity, fruit and a touch of sweetness. Try the 1997 Chateau Ste Michelle Vineyard Select Riesling or the 1997 Livio Felluga Tocai Friulano.
1 lb. ground beef
1 med. onion, chopped
1 tbsp. butter
1 tsp. salt
Pepper
2 (8 oz.) cans tomato sauce
1 c. creamed cottage cheese
1 (8 oz.) pkg. noodles
1/4 c. sour cream
8 oz. cream cheese
1/4 c. chopped green pepper
1/3 c. sliced green onion
In a skillet, brown ground beef and onion in butter - stir in salt, pepper and tomato sauce. Remove from heat - cook noodles according to directions. Drain. Combine rest of ingredients. Spoon half the noodles in a buttered 3 quart casserole. Cover with cheese mixture and top with remaining noodles. Pour hamburger mixture over top. Bake in preheated 350 degree oven for 30 minutes, covered.
CHILI-OODLES
1 lb. lean ground beef
1 c. sliced onion
1 c. diced green pepper
2 cloves garlic, minced
2 c. water
1 3/4 c. (15 oz. can) crushed tomatoes
2/3 c. (6 oz. can) tomato paste
2 tbsp. chili powder
2 tbsp. Worcestershire sauce
1/2 tsp. salt
1/2 pkg. (6 oz.) extra wide egg noodles, uncooked
In 3-quart saucepan, brown ground beef until almost done; drain off excess fat. Add onion, green pepper and garlic; cook until onion is tender but not brown. Stir in remaining ingredients except noodles. Bring to a boil then reduce heat and simmer 20 minutes. Cook noodles according to package directions; drain. Serve chili over hot cooked noodles.
Oodles of Noodles Soup

2 cups diced cooked chicken
2 cups thinly sliced bok choy
½ cups thinly sliced green onions with tops
8 oz mushrooms, sliced
½ cup julienne-cut carrots, 1 inch long
1 1-inch piece peeled fresh gingerroot, finely chopped
2 garlic cloves, pressed
3 cups water
1 can (14 oz) 100% fat free vegetable broth
2 Tbsp reduced sodium soy sauce
1 package (3 oz) oriental-flavor ramen noodles
1.Dice chicken and thinly slice bok choy and green onions using Chef’s Knife; set aside. Slice mushrooms using Egg Slicer Plus. Using Julienne Peeler, cut carrot into julienne strips; cut strip in 1-in pieces. Peel gingerroot; finely chop using Food Chopper.
2.Place mushrooms, carrots, gingerroot and garlic pressed with Garlic Press in Executive (4-qt) Casserole. Add water broth, soy sauce and seasoning packet from ramen noodles; bring to a boil over medium-high heat. Add chicken, bok choy, onions and noodles. Cover; remove from heat. Let stand 3 minutes. Serve immediately.

try some cheese wiz on the noodles drain all of the liquid and add the cheese..you can also add some chopped hot peppers
