In Istanbul, especially at this time of year, eat LUFER (Turkish name) which is normally translated as "Blue Fish" which means nothing to me! Lufer is delicious. The best fish I've tasted anywhere in the world (well, maybe!)
Start the meal with a portion of Midye Tava (deep fried mussels, served with tarator sauce) and Kalamar (squid), then lufer and salad - with chips (patates kazartmasi/frit/pomfrit) if you must. Washed down with a dry white wine (Cankaya - pronounced chang kigh ah - is quite good) or, as the Turks do, Raki (aniseed flavoured grape spirit) with ice and water.
Finish with fruit or baklava or ice cream and then a Turkish coffee (which usually comes with a courtesy Turkish liqueur). When ordering Turkish coffee you have to specify how sweet you want it as the sugar is added before it is prepared - Sade = no sugar, Az S(h)ekerli = a little sugar, Orta = medium, Cok S(h)ekerli = very sweet.
A good place to eat fish is Anadolu Kavagi, at the Black Sea end of the Bosphorus on the Asian side, ferries leave from Eminonu (near the Spice Bazaar).

The best fist to eat in Istanbul are Lufer and Kalkan.
I can also recommend Palamut, Uskumru, Barbunya and Mezgit.
The fish is always fresh in Turkey and as far as it comes from the sea you can trust taste will be good.
I would avoid lake or river fish.

The bridge is called the Galata Köprüsü (Galata Bridge), and yes, the fish sandwiches are delicious. There are nice fish restaurants all along the footpath on either side of the bridge.
Three popular types of Turkish fish are levrek, barbunya, and sardalya. Levrek are sea bass, a nice white fish. Barbunya are small red-and-white fish, also tasty. And sardalya are fresh sardines.
If you drink, have a glass of raki (served as aslan sütü, "lion's milk," by mixing in a lot of cold water to make it milky) with your fish. Delicious.

Whatever they sell on the boats down by the Bosphorus, near the bridge whose name escapes me.
Lovely - really really really lovely hot fried fish sandwiches!
