Part boil them.
Save the carrot juice to make gravy.
put on a roasting tray and season to taste.
pour over balsamic vinegar, dont worry about the smell it goes, and all the vinegar caramalises and leaves the veggies nice and sweet.
double cook them for an even better finish! (slow on a low heat, then a final blast on a high heat to finish off)

part boil them, put them on a roasting tray, lightly drizzle olive oil over them, sprinkle some herbs over the top, and add a few crushed and peeled segments of garlic. roast on a medium / low heat until nearly cooked, then add some feta cheese..... cook for a further 5 mins..... serve straight away. goes well with fish, chicken, or just on it's own with some french stick bread.
