wow you live on the canals???

nice, firstly bait the water with blood and burley to attract the buggers, then throw in a hunk of meat- roo or something similar is good, have a huge hook in it attached to a 44 gallow drum via stainless steel whire a good 2.5 mm thickness at least, attache the drum to something on the mainland via rope of another means.

here is what will happen, the shark will take the bait but be unable to swim away and submerse the 44 gallon drum, effectively it will drown because it cant dive down and swimm unristricted.

this is the way we used to catch tiger sharks when we lived in the torres staits.

It depends on how strong you are and how much stamina you have.
I have taken 300 lb+ bulls on 30 lb mono and a spinning rod. But it takes a long time to wear the beast down.
I would suggest a Penn, 6-0 with 80 lb co-filament. A ten foot stranded leader and a circle hook . Straight hooks will often break if the shark can get his nose on a rock.
Good fishing !
