i want to make an omlette using spinach musrooms and cheese now should i use fresh or frozen spinach should i use can or fresh musrooms and which cheese do u recomend im thinkin some kind of white cheese

oh, my favorite omelet! I love egg-white omelet with spinach, mushroom, sausage and cheese and a side of dry toast!

I would stick with fresh spinach and mushroom, but wilted a little first... just before you cook the eggs, throw a tiny bit of olive oil in the pan and just let the spinach wilt a little. Remove from pan, throw in mushrooms and do the same. Wipe the pan clean and start your eggs! If you add the fresh ingredients raw, they can release too much liquid making your eggs runny or you will have to overcook (and thus toughen) your eggs to get them the right temp/texture.

As far as cheese goes, I would go with sharp cheddar. If you're set on white for presentation, there are some nice white cheddars or maybe a provolone (very subtle flavor esp against the spinach and mushroom, but it melts very well!)

I agree that fresh is always better, but frozen spinach is easier to work with since spinach shrinks so much when you cook it.

You need to use fresh it is not as hard as frozen and it always taste better. Even when you thaw frozen stuff it is still sometimes hard especially the veggies.

Of course fresh taste better, frozen is probably cheaper though

Always fresh, most supermarkets carry fresh produce - in a pinch you can use frozen (IFQ) to substitute!

Is better if you use fresh products, you ill get best flavor and consistency. You can use mozarella, swiss or provolone.
