Ingredients:
1.7 litres /3 pints milk
Lemon Juice
2 tsps plain flour
8 green cardamoms (crushed)
2-3 sugar cubes, cut in 12 small pieces
Milk sauce
570 ml/ 1 pint milk, reduced by boiling to 430 ml /3/4 pint
syrup
340g/12 oz granulated sugar
280ml/1/2 pint water
Decoration
Few drops rosewater or oranfe flower water
30 g/1 oz. pistachio nuts, chopped
30 g/1 oz. almonds, chopped.
Directions:
Bring the 1.7 litres of milk to the boil and add a little lemon juice. Leave to stand until separated. Cool for 10 minutes and then strain through a fine sieve or a clean piece of muslin. Leave to drain overnight. Boil the milk for the sauce to reduce it and prepare the sugar syrup. Combine the granulated sugar and water in a saucepan and cook over a low heat for 2-3 minutes to dissolve the sugar. Bring to a boil for about 3 minutes or until syrupy. Transfer the milk curds to a bowl and beat with an electric mixer or wooden spoon for about 5 minutes to soften. Add the flour and the cardamom seed gradually, and continue beating. Leave for 2-3 minutes, then divide the mixture into 12. Place a piece of sugar cube in the center of each portion then press gently to flatten into 4 cm/1 1`/2 inch rounds. Bring the sugar syrup back to simmering point and drop in the rasmalai balls, a few at a time. Boil them for 10 minutes. Place the milk sauce in a serving dish. Remove the rasmalai from the syrup with a slotted spoon and place them in the mil sauce. When all the rasmalai are cooked and in the milk sauce, sprinkle with rose or orange flower water and chopped nuts. Allow to cool and refrigerate before serving.

RAS MALAI RECIPE
Ingredients:
2 lbs ricotta cheese
1/2 cup sugar
32 oz half & half milk
A pinch of saffron
1/4 tsp crushed cardamom seeds
1/2 cup blanched almonds
2 tbsp crushed green pistachios
Preparation of ras malai:
Mix the cheese with sugar and little cardamom powder and spread out on a baking tray.
Bake at 350 degrees for 35 minutes or until it sets. It should not get brown.
Remove from oven, cool at room temperature and cut into 2" squares.
Place them in a dessert bowl.
Mix the other ingredients, except the pistachios well in a separate dish and pour over the squares.
Decorate the rasmalai with pistachios, chill for 2-3 hours and then serve.
OR
Traditional Rasmalai
This dessert is native of Bengal state. Traditionally, it is made from homemade fresh cheese called Chenna.
Ingredient
Cheese Patties
1. Milk whole milk: 1 Quart
2. White vinegar: 2 Tablespoons
3. Double action Baking powder: 1 teaspoon
4. Maida or All purpose flour: 1 Tablespoon
5. Sugar: 1 cup
6. Water: 3-1/2 cups
Milk Syrup
1. Milk whole milk: 1 Quart
2. Sugar: 1/4 Cup
3. Cardamom seed powder: 1/2 teaspoon
4. Saffron: 6 Strands
5. Rose water: 1/2 Tablespoon
Method
Step 1: Cheese Patties
Bring Milk to a boil or at least 200º F. Stir in white vinegar. The cheese will separate. Turn off heat. Put a colander in the sink. Line it with a thin muslin cloth. Empty the contents into the colander. Let it drain. Press out as much water as possible. You have just made Chenna.
Step 2: Mix the Baking powder and the flour. Lay out Chenna on a hard surface. Sprinkle the flour/baking powder mix on the Chenna. Make it into a smooth paste by crumbling and rubbing it with the heel of your palm. Divide it into 16 equal parts. Form them into a balls. Press each ball in your hand to form a patty. Now you have Rasmalai Patties.
Bring Water and sugar to a boil. Add Rasmalai patties. Bring the water to a boil. Cook covered for about 20 minutes. The patties will puff up. Remove patties and place them in a final dish.
Step 3: Milk Syrup Bring milk to a boil. Cook on medium heat stirring occasionally till its is reduced to 3 cups (1/4 reduction). Add cardamom, saffron and rose water. Let it cool down to warm. Pour the milk syrup over the Rasmalai Patties. Store in the Refrigerate. Serve cold.

1 cup Powdered Milk 1 Egg 1 tsp of Oil 1/4 tsp Baking Powder 1 liter of Milk 6 tbs of Sugar Seeds of 1 small Illaichi 1 tbs of (chopped) Pista 1/2 tsp of Kevera Essence 1) Mix together the ingredients into a dough and form into small oval,slightly flattened balls. Meanwhile boil the milk with sugar and illaichi seeds. 2) When the milk starts to boil add the malai balls. When they start to swell up lower the heat and cook for 10 minutes. 3) Just before removing from heat add kevera essence. Garnish with pista. Serving Suggestions: Serve Chilled
